LEMON CAKE FROM SCRATCH

Lemon Cake From Scratch image

Super yummy, light lemon taste. A different thing to try is to put the cake mixture into large muffin tins to make a bunch of little cakes, you just need to reduce the baking time. Let cake cool before frosting or glaze while still slightly warm.

Time 1h30m

Yield 2 (8-inch) loaves

Number Of Ingredients 13

1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated lemon zest (6 to 8 large lemons)
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed lemon juice, divided
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract
2 cups confectioners' sugar, sifted
3 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/4 by 2 1/2-inch) loaf pans. You may also line the bottom with parchment paper, if desired.
  • Cream the butter and 2 cups granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy, about 5 minutes. With the mixer on medium speed, add the eggs, 1 at a time, and the lemon zest.
  • Sift together the flour, baking powder, baking soda, and salt in a bowl. In another bowl, combine 1/4 cup lemon juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • Combine 1/2 cup granulated sugar with 1/2 cup lemon juice in a small saucepan and cook over low heat until the sugar dissolves. When the cakes are done, allow to cool for 10 minutes. Remove the cakes from the pans and set them on a rack set over a tray or sheet pan; spoon the lemon syrup over them. Allow the cakes to cool completely.
  • For the glaze, combine the confectioners' sugar and the lemon juice in a bowl, mixing with a wire whisk until smooth. Pour over the tops of the cakes and allow the glaze to drizzle down the sides.

LEMON CAKE (ARMENIA)

Lemon Cake (Armenia) image

This recipe is from week 13 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Armenia is my 13th stop. This delicious cake has a texture somewhat like a scone, and is topped with a lemon-mint glaze instead of frosting.

Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 12

1/2 cup butter, at room temperature
3/4 cup sugar
1 cup plain yogurt
2 large eggs
2 tablespoons fresh lemon juice
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 cup sugar
1/4 cup fresh lemon juice
3/4 cup water
3 sprigs mint

Steps:

  • Preheat the oven to 350 degrees.
  • Cream the butter and sugar together. Add the yogurt and the eggs, mixing well.
  • Pour in the lemon juice. Sift together the flour, baking soda and baking powder and add to the bowl, mixing until everything is well incorporated.
  • Spoon the batter into a buttered pan and bake until a toothpick inserted in the center comes out clean and the color is golden (about 40 minutes).
  • Let the cake cool. Meanwhile, combine the ingredients for the syrup in a small saucepan. Bring to a boil and cook over high heat for about 10 to 12 minutes, or until the syrup coats the back of a spoon.
  • Remove the mint and let the syrup cool until it is just warm.
  • Loosen the cake in its pan and pour 1/3 of the syrup over the top. Wait 10 minutes, then do this again. Wait another 10 minutes, then pour the rest of the syrup on the top.
  • Let the cake sit for about an hour, which will give it enough time to absorb the syrup.
  • Invert the cake onto a platter, then slice and serve.

LEMON CAKES

Lemon Cakes image

In the "A Song of Ice and Fire" book series (later known on television as "Game of Thrones"), George R.R. Martin devotes a lot of ink to lemon cakes, a favorite of the Lady of Winterfell Sansa Stark. The cakes have since become a pop culture totem for fans of the series. This recipe is inspired by a version found in "A Feast of Ice and Fire: The Official Game of Thrones Companion Cookbook" by Chelsea Monroe-Cassel and Sariann Lehrer. You don't need to be a fan of "Game of Thrones" to love these cookielike treats, which are dense in texture, bright in flavor and boast a tart-sweet lemon glaze. The cakes are easy to throw together for a potluck or to satisfy a teatime craving.

Time 40m

Yield About 32 cookies

Number Of Ingredients 7

1 2/3 cups/226 grams all-purpose flour
3/4 cup/170 grams granulated sugar
6 tablespoons/85 grams salted butter
2 lemons
1 large egg
2 large egg yolks
1/3 cup/41 grams confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the flour and granulated sugar. Cut in the butter with a pastry blender or two knives to form crumbs with some pebbly bits, then zest the lemons directly into the bowl. In another small bowl, combine the egg and egg yolks. Squeeze 1 tablespoon juice from a lemon and mix into the eggs. Pour the egg mixture into the flour mixture, and gently stir until the dough comes together.
  • Roll the dough into 1-inch balls and space 2 inches apart on the prepared sheets. Bake, 1 sheet at a time, until the tops look just set and dry, 12 to 13 minutes. Cool completely on the sheets.
  • Place the confectioners' sugar in a small bowl. Squeeze 1 1/2 teaspoons juice from a lemon, and stir into the confectioners' sugar until smooth and the consistency of icing. Add more lemon juice if needed. Drizzle over the cooled cookies. Let stand until set.

Tips:

  • Use fresh lemons for the best flavor. The zest and juice of fresh lemons will give your cake a bright, citrusy flavor that is unmatched by bottled lemon juice or lemon extract.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the cake batter, resulting in a lighter, more tender crumb.
  • Add the eggs one at a time, beating well after each addition. This will help to prevent the cake from curdling.
  • Be careful not to overmix the batter. Overmixing can result in a tough, dense cake.
  • Bake the cake in a preheated oven. This will help to ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.

Conclusion:

Lemon cake is a classic dessert that is always a crowd-pleaser. With its bright, citrusy flavor and tender crumb, this cake is perfect for any occasion. Whether you are making it for a special event or just for a weeknight treat, this lemon cake is sure to be a hit.
