minced fresh herbs (basil, fresh oregano, and fresh parsley) or dried herbs (basil, oregano and parsley flakes)
1 1/2 teaspoons cajun seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cornstarch
2 tablespoons cold water
hot cooked spaghetti

Steps:

  • In a large nonstick skillet, stir-fry the chicken, kielbasa, onion and garlic in oil until onion is tender. Add the peppers, mushrooms, tomatoes, herbs, Cajun seasoning, salt and pepper. Cook and stir until chicken juices run clear and vegetables are crisp-tender.
  • Combine cornstarch and cold water until smooth; add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over spaghetti.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will help you stay organized and ensure that your stir-fry comes together quickly and easily.
  • Hot Pan: Make sure your pan is nice and hot before adding your ingredients. This will help to sear the vegetables and prevent them from becoming soggy.
  • Don't Overcrowd the Pan: Cook your vegetables in batches if necessary to avoid overcrowding the pan. Overcrowding will prevent the vegetables from cooking evenly and will make them more likely to steam.
  • Stir Constantly: Stir-fries are all about movement. Keep your ingredients moving in the pan to ensure that they cook evenly and don't burn.
  • Use a Good Quality Cajun Seasoning: The Cajun seasoning is what really gives this stir-fry its flavor. Make sure you use a good quality seasoning that has a good balance of spices.
  • Adjust the Heat to Your Liking: This recipe is written for a medium-spicy stir-fry. If you like your food spicier, add more Cajun seasoning or a pinch of cayenne pepper. If you prefer milder flavors, reduce the amount of Cajun seasoning.

Conclusion:

This Lemon Cajun Stir-Fry is a quick, easy, and delicious weeknight meal. It's packed with vegetables, protein, and flavor. The Cajun seasoning gives the dish a nice kick of spice, while the lemon adds a bright, citrusy note. Serve this stir-fry over rice or noodles for a complete meal.
