BLACKBERRY-LEMON PUDDING CAKE

Blackberry-Lemon Pudding Cake image

I grew up in Texas, where every summer I looked forward to picking dewberries. The berries were so good that not even the threat of snakebite could scare me away. Now I live in Colorado and have since fallen in love with the state's sweet blackberries. I combined the berries with a light and airy lemon meringue batter to create this world-class dessert. -Karen Harris, Littleton, Colorado

Tips:

  • For the best flavor, use fresh blackberries. If you can't find fresh blackberries, you can use frozen blackberries that have been thawed and drained.
  • To make sure the cake is moist, don't overmix the batter. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven. This will help the cake rise evenly.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.
  • If you don't have a lemon zester, you can use a microplane grater to zest the lemon.
  • Store the cake in an airtight container at room temperature for up to 3 days.

Conclusion:

This lemon blackberry cake is a delicious and refreshing dessert that is perfect for any occasion. The cake is moist and flavorful, with a perfect balance of sweetness and tartness. The lemon frosting is light and fluffy, and the blackberries add a pop of color and flavor. Whether you're serving it at a party or enjoying it as a special treat, this cake is sure to be a hit.
