2 cups unsweetened vanilla almond milk or whole milk
1/4 cup pure maple syrup
zest of 1 lemon
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1 cup quinoa
1/4 cup ground flaxseed
1 1/2 cups fresh or frozen mixed berries
1/4 cup sliced almonds

Steps:

  • Preheat oven to 375 degrees and grease an 8 x 11-inch baking dish.

1 1/2 tablespoons vegetable oil
2 cups water
3/4 teaspoon dried marjoram or 3/4 teaspoon oregano
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crumbled
3 tablespoons chopped parsley
2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon grated fresh lemon rind
1/4 teaspoon pepper
