LEMON WAFFLES
Waffles are definitely a weekend breakfast treat - this recipe comes from Christine Cushing. Adding the softly whipped egg whites to the batter will make the waffles nice and fluffy. Serve with pure Canadian maple syrup, fresh berries & whipped cream or pair with blueberry sauce (#78222)...to use Christine's words...wicked! Prep time includes "standing", cook time & # of servings has been estimated - it depends on your waffle iron.

Tips:
- Use buttermilk: Buttermilk adds a tangy flavor to waffles and helps them rise better.
- Don't overmix the batter: Overmixing the batter will make the waffles tough.
- Let the batter rest: Letting the batter rest for a few minutes before cooking allows the gluten to relax, which results in lighter and fluffier waffles.
- Use a hot waffle iron: A hot waffle iron will ensure that the waffles cook evenly and get crispy on the outside.
- Don't overcrowd the waffle iron: Overcrowding the waffle iron will prevent the waffles from cooking evenly.
- Serve waffles warm: Waffles are best served warm and fresh out of the waffle iron.
Conclusion:
Lemon Belgian waffles with berry syrup are a delicious and easy-to-make breakfast or brunch recipe. The waffles are light and fluffy, with a slightly tangy lemon flavor. The berry syrup is sweet and tart, and it perfectly complements the waffles. This recipe is sure to be a hit with your family and friends.
