1/2 c olive oil, extra virgin
2 large cloves garlic, minced
1/2 c grated parmesan cheese
dash(es) salt and pepper

Steps:

  • 1. Chop 4 garlic cloves in a food processor until minced. Add the basil and pine nuts, and pulse a few times to combine. With the food processor running, slowly pour in the olive oil, stopping once or twice to scrape down the sides. Tips:

  • To make the most flavorful pesto, use fresh basil leaves. If you don't have fresh basil, you can use dried basil, but the flavor will be less intense.
  • If you don't have pine nuts, you can substitute walnuts or almonds.
  • To make the pesto ahead of time, store it in an airtight container in the refrigerator for up to 3 days.
  • When cooking the flat iron steak, be sure to cook it over medium-high heat so that it gets a nice sear.
  • If you don't have a grill, you can cook the flat iron steak in a grill pan or on a hot skillet.
  • To serve, slice the flat iron steak against the grain and drizzle with the lemon basil pesto.

Conclusion:

This lemon basil pesto flat iron steak is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The pesto is flavorful and tangy, and the steak is juicy and tender. This dish is sure to be a hit with your family and friends.
