2 cups all-purpose flour
4 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
2 lemons, juiced

Tips:

  • For the perfect texture, use a combination of all-purpose flour and cornstarch. The cornstarch helps to create a tender and crumbly crust.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, resulting in a lighter and more tender crust.
  • Don't overmix the batter. Overmixing can result in a tough crust.
  • Bake the bars until the edges are golden brown and the center is set. The bars should not be overly brown, as this can dry them out.
  • Let the bars cool completely before cutting them. This will help to prevent them from crumbling.
  • For a richer flavor, use freshly squeezed lemon juice. Bottled lemon juice can be used, but it will not have the same bright flavor.
  • Garnish the bars with powdered sugar or lemon zest before serving.
