Time 1h

Yield 4 servings

Number Of Ingredients 13

5 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 pound extra-large shrimp, peeled and deveined
1 small fennel bulb, chopped (about 1 cup)
1 small onion, chopped (about 1 cup)
1 large clove garlic, smashed, peeled, chopped
1 cup Arborio rice (about 6 1/2 ounces)
1/4 cup dry white wine
3 cups low-sodium chicken broth, plus extra as needed
1/4 cup fresh lemon juice (from 1 large lemon)
Zest of 1 large lemon
3 cups arugula

Steps:

  • Heat 2 tablespoons of the oil in a heavy large saucepan over medium heat. Add the shrimp and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until the shrimp are just opaque in the center, about 3 minutes. Remove the pan from the heat. Transfer the shrimp and juices to a bowl to cool.
  • Add the remaining 3 tablespoons oil to the pan. Add the fennel and onions. Cook until tender, about 4 minutes. Add the garlic and cook until aromatic, 30 seconds. Add the rice. Stir until well coated and translucent in spots, about 2 minutes. Add the wine. Cook until the wine is absorbed, stirring often, about 2 minutes. Add the broth, lemon juice, zest, and the remaining 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Increase the heat and bring to a boil, stirring often. Reduce the heat to medium-low. Simmer until the rice is just tender but still has some bite and the risotto is creamy, stirring often, 13 to 14 minutes.
  • Mix in the arugula. Stir until the arugula wilts, about 30 seconds. Add the shrimp. Mix in additional broth if needed, 1/4 cup at a time, until the risotto is creamy.
  • Spoon the risotto into 4 shallow soup bowls.

LEMON BASIL SHRIMP RISOTTO

Lemon Basil Shrimp Risotto image

I wanted to share another one of the recipes I made with some of the roughly five trillion pounds of leftover gigantic shrimp from our Fourth of July

Categories     main dish     seafood

Time 35m

Yield 12 servings

Number Of Ingredients 13

2 tbsp. Butter
1 1/2 lb. Shrimp (I Used U10 Size; Huge!)
1 whole Onion, Finely Diced
4 cloves Garlic, Minced
2 c. Arborio Rice
1 c. Dry White Wine
5 c. Vegetable Broth, Heated (give Or Take)
1 whole Lemon, Zest And Juice
1/2 tsp. Salt
1 tsp. Black Pepper
2 tbsp. Heavy Cream
18 whole Basil Leaves, Chopped Plus Extra For Serving
Grated Parmesan Cheese For Sprinkling

Steps:

  • Heat the butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook both sides until opaque in the middle, about 3 minutes. Remove to a cutting board and chop roughly. Set aside.Return the skillet to the stovetop (do not wash it) and add the onion and garlic. Stir and cook for 2 to 3 minutes, or until onion starts to turn translucent. Reduce heat to medium-low. Add dry Arborio rice to the pan and stir it around for a couple of minutes, taking care not to burn it. Pour in wine and stir gently, allowing the rice to absorb the liquid. After the wine is absorbed, begin adding warm broth 1/2 cup to 1 cup at a time, allowing the rice to cook and absorb the liquid each time. Stir occasionally as you go, and add the salt and pepper during one of the broth additions. After 4 cups of broth have been absorbed, taste the rice. It should have a slight bite, but if it seems undercooked, add additional broth and cook it until it absorbs until the risotto is the perfect doneness. Zest and juice the lemon and add both the zest and the juice to the risotto toward the end of cooking. Stir in the heavy cream, the basil, and serve immediately with extra lemon zest and Parmesan cheese on top.

1 lemon, zested and juiced, plus extra lemon zest, for garnish
2 tablespoons heavy cream
18 fresh basil leaves, chopped, plus extra for serving
Grated Parmesan, for sprinkling

Yield Makes 6 servings

Number Of Ingredients 11

6 cups (about) low-salt chicken broth
1 pound uncooked large shrimp, peeled, deveined
2 tablespoons olive oil
1 1/2 cups chopped onion
2 large garlic cloves, minced
11/2 cups arborio rice or medium-grain white rice (about 9 1/2 ounces)
1/2 cup dry white wine
1 6-ounce package baby spinach leaves
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped fresh basil
Additional grated Parmesan cheese

Steps:

  • Bring 6 cups broth to simmer in medium saucepan. Add shrimp. Turn off heat, cover, and let stand until shrimp are just opaque in center, about 3 minutes. Using slotted spoon, transfer shrimp to small bowl; cover with foil to keep warm. Cover broth to keep warm.
  • Heat oil in heavy large saucepan over medium heat. Add chopped onion and sauté until tender, about 5 minutes. Add minced garlic and stir 1 minute. Add rice and stir until edge of rice is translucent but center is still opaque, about 2 minutes. Add wine and cook until wine is absorbed, stirring occasionally, about 2 minutes. Add 3/4 cup chicken broth. Simmer until almost all broth is absorbed, stirring often, about 2 minutes. Continue to add broth, 3/4 cup at a time, until rice is just tender and mixture is creamy, stirring often and allowing almost all broth to be absorbed after each addition, about 25 minutes total. During last 5 minutes, add spinach in 4 batches, stirring and allowing spinach to wilt after each addition. Mix in shrimp, 1/2 cup Parmesan cheese, and basil. Season risotto to taste with salt and pepper. Spoon risotto into shallow bowls and serve, passing additional cheese separately.

Tips:

  • Use high-quality ingredients. Fresh, flavorful ingredients will make a big difference in the final dish. Look for succulent shrimp, fragrant lemons, and creamy arborio rice.
  • Don't overcook the shrimp. Shrimp cooks quickly, so it's important to watch it carefully and remove it from the heat as soon as it's cooked through. Otherwise, it will become tough and rubbery.
  • Toast the rice before adding the liquid. This helps to develop its flavor and prevent it from becoming sticky.
  • Add the liquid gradually. Don't dump all of the liquid into the rice at once. Instead, add it in small increments, stirring constantly, until the rice is cooked through and creamy.
  • Use a good quality white wine. The wine will add flavor to the risotto, so it's important to choose one that you enjoy drinking.
  • Season the risotto to taste. Add salt, pepper, and lemon juice to taste until the risotto is perfectly seasoned.
  • Serve the risotto immediately. Risotto is best enjoyed fresh out of the pan, so serve it as soon as it's cooked.

Conclusion:

This Lemon and Shrimp Risotto with Fresh Basil is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The combination of succulent shrimp, fragrant lemons, and creamy arborio rice is sure to please everyone at the table. So next time you're looking for a flavorful and impressive dish to serve, give this risotto a try.
