2 tablespoons fresh lemon juice
2 teaspoons olive oil
1/2 small onion, minced
2 garlic cloves, minced
3 tablespoons dry white wine
1/4 cup canned unsalted chicken broth
2 small plum tomatoes, seeded, diced
2 tablespoons chopped fresh basil
1/2 teaspoon grated lemon peel

Steps:

  • Cut tenderloin into 1-inch pieces. Place 1 piece between 2 sheets of waxed paper. Pound turkey with mallet or small heavy flat-bottomed saucepan until flattened to thickness of 1/4 inch. Repeat with remaining tenderloin. Sprinkle lemon juice over turkey. Cover and refrigerate 10 minutes.

1/4 cup all-purpose flour
1/8 teaspoon salt

3 cups sliced mushrooms

All purpose flour
