2 tablespoons butter
½ cup sliced shallots
10 slices jarred jalapeno peppers, chopped - or more to taste
½ cup cranberry jelly
2 cups shredded cooked turkey
½ cup shredded white Cheddar cheese
48 scoop-style tortilla chips (such as Tostitos® Scoops®)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a skillet over medium heat; cook and stir shallots in the hot butter until softened, about 2 minutes. Stir jalapeno peppers into shallots and cook until fragrant, about 2 more minutes. Stir cranberry jelly into the shallots and peppers until melted.
  • Mix shredded turkey with jalapeno-cranberry jelly mixture in a bowl until thoroughly combined. Arrange tortilla chips on the prepared baking sheet and fill each chip with 1 tablespoon turkey mix. Top each chip with 1/2 teaspoon of white Cheddar cheese.

1 cup cubed cooked turkey
¾ cup salsa
¼ cup sour cream
¼ cup sliced black olives
1 (13.5 ounce) package tortilla chips

Steps:

  • Combine cheese food, turkey, and salsa in a large microwave-safe bowl.
  • Heat cheese mixture on high in microwave, stirring after 1 minute and every 30 seconds thereafter, until cheese is melted, about 3 minutes. Top with sour cream and olives and serve with tortilla chips.

3 Tbsp lime juice
2 Tbsp olive oil
1 tsp ground cumin
1 tsp garlic powder
2 c cooked turkey, coarsely chopped
salt & pepper to taste
1 pkg 10 ounce large tortilla chips, I used the blue corn organic chips
1 can(s) 16 fluid ounces refried beans
2 c shredded monterey jack cheese
2 c salsa
sour cream
cilantro, fresh

Steps:

  • 1. Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.
  • 2. Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.
  • 3. Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.
  • 4. Top with turkey.
  • 5. Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.
  • 6. Spoon half the salsa evenly over chips. Top with remaining cup of cheese.
  • 7. Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.
  • 8. Serve hot with remaining salsa, sour cream and cilantro, if desired.
