1 small onion (finely chopped)
1/2 red bell pepper (finely chopped)
3/4 cup panko
1/2 cup whole milk
1 large egg (lightly beaten)
1/4 cup freshly grated Parmesan cheese
1/2 cup chili sauce (such as Heinz)
1 tablespoon Worcestershire sauce
1 teaspoon salt
Freshly ground black pepper (to taste)
1 1/2 pounds ground chuck
1/2 cup chili sauce (or the rest of the bottle)
1 teaspoon Worcestershire sauce
1 tablespoon brown sugar
1/2 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine all ingredients except the beef and mix well. Add beef and combine well.
  • Turn mixture into a 9 x 5-inch loaf pan and pat down to form a nice loaf shape.
  • Bake 40 minutes. Brush glaze ingredients over meatloaf and bake another 20-25 minutes or until cooked through to 165 degrees.

2 tablespoons olive oil
1 onion , chopped
3 cloves garlic, minced
1 to 2 jalapeno peppers, minced
2 to 3 cups crumbled leftover meatloaf
2 (14-ounce) cans diced tomatoes, undrained
1 (8-ounce) can tomato sauce
2/3 cup beef broth
2 (15-ounce) cans black beans, rinsed and drained
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon Tabasco sauce
Salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • In large pot heat olive oil over medium heat. Add onion and garlic; cook and stir for 5 minutes. Add jalapeño pepper; cook and stir for 3 minutes.
  • Add meatloaf, diced tomatoes, tomato sauce, beef broth, black beans, chili powder, cumin, Tabasco, and salt and pepper to taste. Bring to a simmer; reduce heat to low and simmer for 25 to 35 minutes until slightly thickened.

1 large onion, finely chopped
1/2 cup seasoned bread crumbs
1 small green pepper, chopped
2 large eggs, lightly beaten
1/2 cup chili sauce
2 tablespoons spicy brown mustard
3 to 4 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 pounds lean ground beef (90% lean)
Additional chili sauce, optional

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. 1/4 cup chili powder (I used Chili Seasoning Mix)
