Yield Serves 2

Number Of Ingredients 6

3 cups thinly sliced cabbage
1/2 teaspoon caraway seeds, toasted lightly
1 tablespoon extra-virgin olive oil
1 scallion, chopped fine
coarse salt to taste
fresh lemon juice to taste

Steps:

  • In a large saucepan of boiling salted water cook the cabbage for
  • 3 minutes, or until it is just tender, drain it well, and in a bowl toss it with the caraway seeds, the oil, the scallion, the salt, the lemon juice, and pepper to taste.

Tips:

  • Choose the right leeks: Select young, tender leeks with firm, white bulbs and dark green leaves. Avoid leeks with yellow or wilted leaves.
  • Clean the leeks thoroughly: Leeks can trap dirt and grit between their layers, so it's important to clean them thoroughly. Cut off the root end and the dark green tops, then slice the leeks lengthwise and rinse them under cold water, separating the layers to remove any hidden dirt.
  • Cook the leeks until tender: Leeks should be cooked until they are soft and tender, but not mushy. Depending on the recipe, you can cook them by sautéing, roasting, or steaming. For sautéed leeks, cook them over medium heat for about 10 minutes, stirring occasionally. For roasted leeks, toss them with olive oil, salt, and pepper, and roast them at 400°F for about 20 minutes, or until they are tender and slightly caramelized. For steamed leeks, place them in a steamer basket over a pot of boiling water and steam them for about 10 minutes, or until they are tender.
  • Add caraway seeds for a unique flavor: Caraway seeds have a warm, slightly nutty flavor that complements the mild flavor of leeks. Add a teaspoon of caraway seeds to your leek recipes for a unique and delicious twist.
  • Experiment with different cooking methods and recipes: There are many ways to cook leeks. You can sauté them, roast them, steam them, or even grill them. You can also use them in a variety of recipes, from soups and stews to salads and pasta dishes.

Conclusion:

Leeks are a versatile vegetable that can be used in a variety of dishes. They are a good source of vitamins, minerals, and antioxidants, and they have a mild, slightly sweet flavor that pairs well with many other ingredients. Whether you are a beginner cook or a seasoned pro, there is a leek recipe out there for you. So next time you are looking for a healthy and delicious way to add some variety to your meals, give leeks a try.
