2 teaspoons balsamic vinegar
1/4 cup olive oil
Kosher salt and freshly ground black pepper

This recipe originates in Wales. From Classic International Recipes. Use only the white and light green portions of the leeks.....I couldn't include that in the ingredients for some reason. Prep and cook time does not include the one hour chilling time.

Tips:

  • Choose the right leeks: Select young, tender leeks with firm, white bulbs and dark green leaves. Avoid leeks that are wilted, bruised, or have yellow or brown spots.
  • Clean the leeks thoroughly: Leeks can be quite dirty, so it's important to clean them thoroughly before using them. Trim off the root end and the dark green tops. Then, slice the leeks lengthwise and rinse them under cold water to remove any dirt or grit.
  • Use a sharp knife: A sharp knife is essential for thinly slicing the leeks. This will help them cook evenly and absorb the flavors of the dressing.
  • Don't overcook the leeks: Leeks should be cooked until they are tender, but not mushy. Overcooked leeks will lose their flavor and texture.
  • Use a variety of citrus fruits: Feel free to experiment with different types of citrus fruits in this salad. Mandarin oranges are a classic choice, but you could also use grapefruit, blood oranges, or even lemons or limes.
  • Add some nuts or seeds: For extra crunch and flavor, try adding some nuts or seeds to the salad. Chopped walnuts, almonds, or sunflower seeds would all be great options.
  • Serve immediately: This salad is best enjoyed immediately after it is made. The longer it sits, the more the leeks will wilt and the dressing will lose its flavor.

Conclusion:

This leek salad with mandarin oranges is a refreshing and flavorful side dish that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and delicious salad, give this one a try!
