POTATO AND LEEK GRATIN

Potato and Leek Gratin image

A mandoline will slice the potatoes quickly and to the exact same thickness, though a sharp knife will also work. Instead of burying the potatoes and leeks in cream, a drizzle of milk is added to every layer of the gratin; the potatoes get wonderfully crisp and tender, and the cheeses form a melty, golden crust. The result is a rich, rustic potato side with contrasting flavors and textures-a bit of crunch to round out the stuffing, sauces, and mashes on the plate. Reheat leftovers in the oven until crisped and warmed through, and then serve with eggs and a side of fruit for breakfast.

CREAMY POTATO AND LEEK GRATIN

Creamy Potato and Leek Gratin image

Cutting leeks into large pieces (they almost dissolve when thinly sliced) gives them a presence equal to disks of potato, while cooking the vegetables separately-the leeks are braised in butter, the spuds are simmered in milk and cream-preserves their distinct flavors. The glorious results will supply the homiest meatloaf supper with pizzazz.

2 teaspoons kosher salt
6 large russet (baking) potatoes (about 3 pounds), peeled
6 ounces imported Swiss cheese, such as Gruyère or Emmental, shredded (1 1/2 cups packed)
1 (11-ounce) jar water-packed artichoke hearts, drained and sliced
1 1/2 teaspoons freshly ground black pepper
2 cups half-and-half
1/3 cup Parmesan cheese, finely grated

Steps:

  • Preheat oven to 425°F. Butter 9- by 13-inch glass baking dish or 14-inch oval gratin dish.
  • In medium saucepan over moderately high heat, combine leeks, 1/2 teaspoon kosher salt, and 2/3 cup water. Cover, bring to boil, then reduce heat and simmer, stirring occasionally, until tender, about 8 minutes. Drain, transfer leeks to medium bowl, and let cool.

  • Add Swiss cheese, artichokes, pepper, and remaining 1 1/2 teaspoons kosher salt to leeks and toss well.
  • Layer 1/3 of potatoes in bottom of prepared dish, overlapping slightly. Evenly spoon 1/2 of leek-cheese mixture over top. Top with second layer of potatoes, then remaining leek-cheese mixture, then final layer of potatoes. Slowly pour half-and-half over top. Cover snugly with foil.
  • Bake 40 minutes. Remove foil, sprinkle Parmesan cheese over top, and bake until top is golden and potatoes are easily pierced with small knife, about 20 minutes more. Serve warm.

Tips:

  • Use high-quality ingredients: Fresh, flavorful leeks, potatoes, and cheese are essential for making a delicious leek and potato au gratin. Opt for organic, locally-sourced ingredients whenever possible.
  • Wash the leeks thoroughly: Leeks can be quite dirty, so it's important to wash them thoroughly before using them. Trim off the root ends and any wilted or bruised leaves, then rinse the leeks under cold water. You can also soak them in a bowl of water for a few minutes to help remove any dirt or grit.
  • Slice the leeks thinly: Thinly slicing the leeks will help them cook evenly and will also make them more tender. You can use a sharp knife or a mandoline to slice the leeks.
  • Cook the leeks until softened: Before adding the leeks to the au gratin dish, cook them in a little butter or oil until they are softened and translucent. This will help to bring out their flavor and will also help to prevent them from becoming tough.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of your leek and potato au gratin. Choose a cheese that melts well and has a strong flavor, such as Gruyère, cheddar, or Parmesan.
  • Don't overcook the au gratin: Leek and potato au gratin is best when it is cooked until the potatoes are tender and the cheese is melted and bubbly. However, if you overcook it, the potatoes will become mushy and the cheese will become tough.

Conclusion:

Leek and potato au gratin is a delicious and comforting dish that is perfect for a special occasion or a weeknight meal. With its creamy, cheesy sauce, tender potatoes, and flavorful leeks, it's sure to be a hit with everyone at the table. So next time you're looking for a new side dish to try, give leek and potato au gratin a try. You won't be disappointed!
