Yield 2 people

Number Of Ingredients 13

1/2 kilo pork liempo (pork belly)
3 garlic cloves, crushed
2 laurel leaves (bay leaves)
1 teaspoon peppercorns or 1/2 teaspoon black pepper
salt
water, for boiling
oil (for frying)
Sauce:
3 tablespoons soy sauce
5 tablespoons vinegar
1 shallot, minced or 1 small onion, minced
1 garlic clove, minced
chili peppers (optional)

Steps:

  • •Cut the pork belly into serving pieces then combine with the garlic, peppercorn, laurel leaves, salt and water in a pan. •Bring to a boil and simmer for 35-45 minutes or until skin is tender. •Drain, cool and air dry. •Deep-fry liempo pieces in batches until golden brown and blisters appear on skin. •Mix all the sauce ingredients and serve lechon kawali while it's hot.

Tips:

  • Choose the right cut of pork. A fatty cut of pork like the pork belly or shoulder is best for lechon kawali, as the fat will render out and make the meat juicy and flavorful.
  • Marinate the pork overnight. This will help to tenderize the meat and infuse it with flavor. A simple marinade made with garlic, soy sauce, vinegar, and bay leaves is a good option.
  • Fry the pork in hot oil. This will help to create a crispy crust on the outside of the meat. Use a large pot or Dutch oven so that the pork has plenty of room to fry.
  • Cook the pork until it is tender. The pork should be cooked through, but it should not be overcooked, or it will become dry. A meat thermometer is a good way to check the internal temperature of the pork.
  • Serve the pork with a dipping sauce. A simple dipping sauce made with soy sauce, vinegar, and garlic is a good option.

Conclusion:

Lechon kawali is a delicious and flavorful Filipino dish that is perfect for any occasion. With its crispy crust and tender meat, lechon kawali is sure to be a hit with everyone who tries it.
