FRESH RESTAURANT-STYLE SALSA

Fresh Restaurant-Style Salsa image

This addictive salsa is restaurant quality, or maybe even better! It's fresh and flavorful, not too spicy, and easy to make in a food processor with a mix of ripe and canned Roma tomatoes. This makes a big batch which is good because it will go fast. Serve with lots of thin, crispy tortilla chips and a margarita, of course!

Another salsa recipe called for a fresh jalapeno (I think), but I had green chiles in a can on hand. This salsa tastes great, so I'm sticking with it!

EASY SALSA

Easy Salsa image

A coworker of mine brought her homemade salsa in to work. I loved it so much I wanted to make it myself, but forgot exactly what and how much of everything she put into it. And combined with a little bit of laziness, this is the result. Loved and requested by friends.

EASY "FRESH" SALSA

Easy

I asked for this recipe at a party 20 years ago, and I've been making it ever since! I always feel a little guilty when people ask for the recipe, because it's so easy!!! The addition of the cilantro makes it great, and fresh tasting. Don't use regular stewed tomatoes; it just won't taste nearly as good.

Yield 32 oz.

5 slices nacho-style jalapenos

5 dashes chili powder

  • Put all ingredients in a blender and chop until fairly smooth.
  • Store in a jar in the refrigerator for up to two weeks.

Tips:

  • Choose ripe, flavorful tomatoes: Ripe tomatoes are sweeter and have more flavor than unripe ones. Look for tomatoes that are deep red in color and free of blemishes.
  • Use a variety of tomatoes: Using a variety of tomatoes will give your salsa a more complex flavor. Roma tomatoes are a good choice for salsa because they are firm and have a low water content. Cherry tomatoes can also be used, but they will need to be quartered or halved before adding them to the food processor.
  • Don't overprocess the salsa: Pulse the salsa in the food processor just until it reaches your desired consistency. If you overprocess it, the salsa will become too smooth and lose its texture.
  • Add some heat: If you like spicy salsa, add a jalapeño or serrano pepper to the food processor along with the other ingredients. You can also add a pinch of cayenne pepper or paprika.
  • Season to taste: Once you've made the salsa, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or lime juice.
  • Chill the salsa before serving: Chilling the salsa before serving will allow the flavors to meld and develop. You can chill the salsa for at least 30 minutes or up to overnight.
