This recipe is very similar to one my mother used to make and that I still make a few times a year, only I use smoked sausage instead of ham. This looks yummy and makes for a nice change. Recipe & photo: stockpilingmoms.com

SLOW COOKER GREEN BEANS, HAM AND POTATOES

Slow Cooker Green Beans, Ham and Potatoes image

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

Categories     Main Dish Recipes     Pork     Ham

Time 4h30m

Yield 10

Number Of Ingredients 9

2 pounds fresh green beans, rinsed and trimmed
1 large onion, chopped
3 ham hocks
1 ½ pounds new potatoes, quartered
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoning salt
1 tablespoon chicken bouillon granules
ground black pepper to taste

Steps:

  • Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
  • Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
  • To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your dish. Look for crisp, green beans, tender potatoes, and smoky ham.
  • Don't overcook the vegetables: They should be cooked through but still have a bit of a bite to them. Overcooked vegetables will be mushy and bland.
  • Season the dish well: Salt, pepper, and garlic powder are all essential seasonings for this dish. You can also add other spices, such as paprika, thyme, or oregano, to taste.
  • Serve the dish immediately: This is a dish that is best enjoyed fresh. The vegetables will start to lose their flavor if they sit for too long.

Conclusion:

Leah Chase's Green Beans with Ham and Potatoes is a classic Southern dish that is easy to make and always a crowd-pleaser. With its combination of smoky ham, tender vegetables, and flavorful sauce, this dish is sure to be a hit at your next potluck or family gathering. So next time you're looking for a delicious and easy side dish, give this recipe a try. You won't be disappointed!
