1 tablespoon unsalted butter, melted
1 quart ricotta sopraffina or any whole-milk ricotta
1 large egg
1 bunch fresh flat-leaf parsley, finely chopped, plus extra for garnish
Kosher salt and black pepper
1 quart long-simmered tomato sauce, such as Broders' Sugo Betti, plus extra for serving
2 pounds fresh pasta sheets, such as Broders' Fresh Pasta Sheets (about twelve 10-by-6-inch sheets)
1 pound low-moisture whole-milk mozzarella, shredded
8 ounces Grana Padano or Parmigiano-Reggiano, grated
1 pound bulk hot or mild Italian sausage, cooked, chilled and chopped in the food processor

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-by-13-inch glass baking dish with the melted butter.
  • Place the ricotta, egg, parsley, 2 teaspoons salt and 1 teaspoon pepper in a large bowl and mix thoroughly.
  • Assemble the lasagna by evenly spreading 1/4 cup of the tomato sauce on the bottom of the prepared baking dish. Cover the sauce with some of the raw pasta sheets, cutting and piecing together the pasta as necessary to fit the dish (see Cook's Note).
  • Spread 3/4 cup of the ricotta mixture evenly over the pasta using an offset spatula or your desired utensil. Make sure to get the ricotta to the edges and corners of the dish. Pour 1/2 cup of the tomato sauce onto the ricotta and spread evenly.
  • Sprinkle 1 lightly filled (not packed) cup of the mozzarella over the top, followed by a light handful of Grana Padano and roughly one-fifth of the cooked and chopped sausage. Repeat 4 more times, starting with the pasta.
  • For the sixth and final layer, begin by laying your pasta, then spread the remaining sauce on top. Sprinkle the remaining mozzarella over the sauce. Cover the dish well with aluminum foil to trap in moisture and help the raw pasta cook.
  • Bake, covered, for 30 minutes, then uncover the lasagna and cook until the lasagna has crisped and browned to your liking, 15 to 30 minutes more. Serve with extra warmed tomato sauce and garnish with any remaining Grana Padano and parsley.

TRADITIONAL SUPREME LASAGNA

This is a combination of many lasagna recipes. This version is our favorite and comes close to what I always think of as a true restaurant style lasagna. I like to cook my own noodles, but you can also use no bake lasagna noodles and just add a 1 1/2 cups of water to the bottled sauces. You can also substitute ground beef or chicken for the turkey.

1 (12 ounce) package lasagna noodles
1 tablespoon salt
3/4 lb ground turkey
1 lb Italian sausage, spicy, ground
8 ounces mushrooms, chopped
1 cup onion, chopped
6 garlic cloves, minced
1 tablespoon sugar
2.5 (24 ounce) jars spaghetti sauce, tomato and basil flavor
1 lb ricotta cheese
2 tablespoons fresh basil, minced
2 eggs
1 tablespoon fresh parsley
1 lb mozzarella cheese, shredded
1 1/2 cups parmesan cheese, grated
4 ounces provolone cheese, cut in 1/2 inch pieces

Steps:

  • Turn on oven to 375 degrees.
  • Bring a large pot of water to a boil with the salt and cook noodles according to package directions. Drain and cool, cover with water to prevent sticking.
  • Cook sausage and ground turkey in a large skillet, set aside. In same skillet saute onion and mushrooms 5 minutes. Add garlic, saute 1 minute. Drain off excess fat if necessary. Add sugar and mix with meat mixture.
  • In another bowl mix ricotta cheese, eggs, basil and parsley.
  • Mix mozzarella cheese and 1/2 cup of the parmesan cheese.
  • In a 13x9 lasgna pan layer ingredients in the following order: spaghetti sauce, lasagna noodles, ricotta mixture, meat mixture, mozzarella cheese, repeat twice ending with another layer of spaghetti sauce.
  • Bake covered for 1 hour. Uncover and sprinkle top with provolone and remaning 1/2 cup parmesan cheese and bake an additional 20-30 minutes untill hot and bubbly.

Got this recipe from the first cookbook I ever bought. I was right out of high school and had never attempted anything more difficult than a grilled-cheese sandwich. But when I tried this recipe, I fell in love with cooking. This was also the very first time I had ever tried lasagna. Now when ever anyone hears I am cooking lasagna I have a house-full for dinner!

1/2 lb ground beef
1/2 lb mild Italian sausage
1/2 cup chopped onion
2 garlic cloves, minced
1 (6 ounce) can tomato paste
1 (16 ounce) can tomatoes, undrained and cut up
2 teaspoons dried basil, crushed
1 teaspoon dried marjoram, crushed
1 (4 ounce) can sliced mushrooms, drained
2 eggs
1 lb cream-style cottage cheese
3/4 cup grated parmesan cheese, divided
2 tablespoons parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces uncooked lasagna noodles, cooked, drained and rinsed
2 cups shredded cheddar cheese
3 cups shredded mozzarella cheese

Steps:

  • Cook meats, onion and garlic in large skillet over med-high heat until meat is brown, stirring to separate meat; drain fat.
  • Add tomatoes with juice, tomato paste, basil and marjoram.
  • Reduce heat to low, cover; simmer 15 minutes, stirring often. Stir in mushrooms, set aside.
  • Beat eggs in large bowl; add cottage cheese, 1/2 cup of Parmesan cheese, parsley, salt and pepper. Mix well.
  • Place 1/2 of the noodles in bottom of greased 13x9-inch pan.
  • Spread 1/2 of cheese mixture over noodles, 1/2 of meat mixture and 1/2 of cheddar and mozzarella cheeses.
  • Repeat layers. Sprinkle with remaining 1/4 cup of Parmesan.
  • Bake in preheated 375 degree oven 40 to 45 minutes or until bubbly.
  • Let stand 10 minutes.
  • Note: I almost always substitute fresh mushrooms for canned, and sometimes substitute Italian seasoning for the basil and morjaram. I wanted to post the original recipe, but I think these substitutions make the recipe better.

I started making this recipe when my husband and I were dating. I can't credit this recipe with our eventual marriage, but he does love lasagna. He even likes this better than his grandma's that he used to request for his birthday meal every year as a kid. Shh...don't tell anyone in his family that! My toddler loves it, too! It's also a great recipe for those who don't like ricotta or soupy lasagnas - it's very firm. I've used feta instead of half of the mozzarella before and that is good as well.

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

This is a salmon loaf I have been making since the 1960's and everyone that has ever tried it, raves over it. It takes a little more time than some but it is worth it!! This is also great cold.

1 (1 lb) can salmon
1/2 cup milk
3 cups soft breadcrumbs
1/4 cup butter or 1/4 cup margarine, melted
1/3 cup salmon liquid
3 egg yolks, beaten
2 tablespoons chopped onions
1 tablespoon lemon juice
1/8 teaspoon pepper
3 egg whites, stiffly beaten

Steps:

  • Drain salmon, reserving liquid.
  • Flake salmon.
  • Scald the milk, add breadcrumbs and butter and let stand 5 minutes.
  • Add salmon liquid and beat until smooth.
  • Add egg yolks,onion,lemon juice,pepper,and salmon;mix thoroughly.
  • Fold in egg whites.
  • Pour in a well greased 1 1/2 quart loaf pan.
  • Bake in 350 degree oven 50 to 60 minutes or until firm in the center,remove from oven and let stand for 5 minutes.
  • Loosen from side of pan with a spatula and invert onto plate.
  • I usually make creamed peas to go with this or sometimes I use a can of celery soup diluted with half a can of milk, both ways are great.
  • This has been a favorite of mine for years, it is a little fussy but trust me, it is worth it.
