LAZY DAY BRUNCH CASSEROLE (CRUSTLESS QUICHE)

Lazy Day Brunch Casserole (Crustless Quiche) image

This is a very simple, but delicious brunch casserole - almost like a crustless quiche. We had this for our Lazy Day New Years brunch (our guests come in pajamas and stay that way all day - hence the name). It's very colourful and quick to throw together, especially if the cheese is grated and broccoli is chopped the day before. Don't chop the tomatoes ahead of time though as they tend to get soggy and lose flavour if refrigerated.

Provided by peridot728

Number Of Ingredients 11

1 1/2 to 2 pounds ground beef
1 medium onion, chopped
1 tablespoon oil
1 teaspoon garlic, minced
2 (15-ounce) cans tomatoes, diced
1 (8-ounce) can tomato sauce
1 cup water
1 small cabbage head, chopped
1 teaspoon pepper
1 teaspoon salt
1/2 cup uncooked rice, optional

Steps:

  • In a deep dish skillet with a small amount of oil, brown ground beef, and onion. Drain. Add the minced garlic to the ground beef with onions and give it a quick saute. Add in water, diced tomatoes and tomato sauce. Season with salt and pepper. Toss in the uncooked rice at this point if using. Place chopped cabbage in pan, and toss to combine all ingredients. Cover the pan with lid and simmer for 30 minutes or until cabbage has cooked.

Tips:

  • Mise en Place: Before starting, ensure all ingredients are measured, prepped, and within reach. This streamlines the cooking process, saving time and reducing stress.
  • Use Quality Ingredients: The better the quality of your ingredients, the tastier your casserole will be. Choose fresh vegetables, high-quality canned goods, and flavorful cheese.
  • Don't Overcook: Casseroles are best when cooked until the ingredients are heated through but not overcooked. Overcooking can result in a dry, tough casserole.
  • Season Well: Don't be afraid to add plenty of salt, pepper, and other seasonings to your casserole. This will help bring out the flavors of the ingredients and make your dish more enjoyable.
  • Consider Adding a Crunchy Topping: A crunchy topping, such as bread crumbs, crushed crackers, or grated Parmesan cheese, can add a nice textural contrast to your casserole.
  • Let It Rest: After baking, let your casserole rest for a few minutes before serving. This will allow the flavors to meld and the casserole to set.

Conclusion:

Lazy Day Casserole is a versatile and convenient dish that can be tailored to your tastes and preferences. With its simple ingredients and easy preparation, it's a perfect meal for busy weeknights or casual gatherings. Experiment with different ingredients and toppings to create a casserole that your family and friends will love. Whether you're a seasoned cook or a beginner in the kitchen, this recipe is sure to become a staple in your culinary repertoire.
