I got this recipe from Canadian Living magazine a few years ago. It is a delicious layered casserole combination of creamy mashed potatoes, spinach and squash, that's a great comfort food laced with zingy fresh ginger. I often receive potluck invitatiions with the requests to bring "That layered thing."

Tips:

  • Choose firm vegetables: This will help them hold their shape during cooking and prevent them from becoming mushy.
  • Cut vegetables into uniform pieces: This will ensure that they cook evenly.
  • Layer the vegetables in a casserole dish: Start with a layer of root vegetables, then add a layer of leafy greens, and finally a layer of tomatoes or other acidic vegetables.
  • Season each layer of vegetables: Use a variety of herbs, spices, and salt and pepper to taste.
  • Add a liquid to the casserole: This could be water, broth, or even wine. The liquid will help the vegetables cook and prevent them from drying out.
  • Bake the casserole until the vegetables are tender: The cooking time will vary depending on the type of vegetables you are using.
