Time 55m

Number Of Ingredients 10

2 can(s) 12 oz. each corned beef
1 1/2 c caraway rye bread crumbs
1 large egg
1/2 c chopped onion
1/4 c sweet pickle relish
1/4 c creamy russian dressing
1 Tbsp worcestershire sauce
1/4 tsp pepper
32 jar(s) sauerkraut, drained and rinsed
1 1/2 c grated swiss cheese

Steps:

  • 1. Combine the first 8 ingredients. In a sprayed 9x13-inch baking pan, spread 1/2 the mixture . Now evenly spread 1/2 the sauerkraut, 1/2 the cheese, then remainder of corned beef mixture and remaining cheese. Bake at 325^ for 45 minutes.

Tips:

  • For the best flavor, use high-quality rye bread. Look for loaves that are dense and slightly chewy.
  • Make sure the corned beef is thinly sliced. This will help it to cook evenly and prevent it from becoming tough.
  • Use a good quality Swiss cheese. A sharp Swiss will give the casserole a more pronounced flavor.
  • Don't be afraid to experiment with the seasonings. Add more or less garlic powder, onion powder, or caraway seeds to taste.
  • If you don't have a large enough casserole dish, you can make the casserole in two smaller dishes. Just be sure to adjust the cooking time accordingly.
  • Serve the casserole hot with your favorite sides. Some popular options include mashed potatoes, roasted vegetables, or a simple green salad.
