A creamy ricotta filling with a hint of lemon and almond is baked inside of a sweet Italian pie pastry. Typically served on Easter, but not exclusively, this Ricotta Pie is the star of the show at any meal. The ricotta typically needs to be strained, so prepare ahead of time since this process takes at least 8 hours in the refrigerator or overnight. Please also note this pie requires a 9" deep-dish pie pan.

3 cups (360 grams) all-purpose flour
½ cup (60 grams) powdered sugar
1/2 teaspoon baking powder
1 teaspoon lemon zest
½ teaspoon salt
1 cup (226 grams) unsalted butter
2 large eggs
32 ounces (905 grams) whole-milk ricotta, strained if very watery (see notes)
3/4 cup (150 grams) granulated sugar
4 large eggs
1 teaspoon lemon juice
1 teaspoon lemon zest
⅛ teaspoon almond extract
Egg wash, for assembling

Steps:

  • Preheat the oven to 375ºF
  • Add the flour, powdered sugar, baking powder, lemon zest and salt to the bowl of a food processor, and pulse until well combined.
  • Add in the butter and pulse 5-7 times, or until the butter is broken down into tiny pebbles.
  • With the motor running, add in the eggs and let the dough process until it forms together into a cohesive ball around the blade, about 1 minute.
  • Transfer the dough to a work surface dusted with flour. Divide the dough in half.
  • Roll out half of the dough to a rough 11″ circle and place inside of a 9″ deep-dish pie plate, tucking the ends of the pastry underneath themselves to form an edge. Pierce the bottom of the pastry multiple times with a fork to allow the steam to escape when baking. Place the pastry in the freezer to chill while the oven preheats, or at least 10 minutes.
  • Roll out the other half of the dough to a rough 10-inch circle. Place the pie dough on a flat surface (such as a sheet pan) that can fit in your refrigerator. Cover, and transfer to the refrigerator to chill.
  • Remove the bottom crust from the freezer and line the pastry with a round piece of parchment paper and then add pie weights to fill (or dry rice or beans or lentils), making sure to push pie weights up against the edges. Bake for 20 minutes on the lower rack, then remove from the oven and remove the parchment and pie weights. Return to the oven and bake for an additional 5 minutes.
  • Remove from the oven and let cool for about 15 minutes.
  • Meanwhile, make the filling: Add the (strained) ricotta to a large bowl. Whip it with a whisk for 30 seconds until lightened. Add the sugar, eggs, lemon juice, lemon zest, and almond extract and whisk together until well combined.
  • Transfer the filling to the slightly cooled pie shell.
  • Whisk together an egg with a bit of water to make an egg wash.
  • Remove the rolled-out top crust from the refrigerator. Score the top crust with the fork in a lattice pattern by evenly pressing and dragging the fork on the pastry. You want to get a good score on it, but make sure not to cut through the pastry.
  • Brush the egg wash on the top crust as well as on the edges of the baked bottom pie crust (this will help the top crust seal to the edges). Transfer the top crust pastry on top of the ricotta filling. Seal the top crust into the edges, and cut off any excess dough.
  • Bake the pie on a rimmed baking sheet in the middle part of the oven for 40-50 minutes, or until the top is golden and shiny and the filling has just nearly puffed up throughout, leaving just a small portion in the middle that has not risen.
  • Let cool for at last 2 hours. Serve at room temperature or cold.

2 cups flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon fine salt
lemon zest from 1/2 a lemon
1 large egg
1 egg yolk
1/2 cup unsalted butter (cold, chopped)
32 ounces whole milk Ricotta cheese
1 cup sugar
4 large eggs
1 egg white
lemon zest from 1/2 a lemon
1 teaspoon lemon juice
1/2 teaspoon almond extract (or vanilla extract if you prefer)

Steps:

  • Zest the lemon and divide the zested lemon equally for crust and filling. Put aside the filling half for later.
  • Beat together half the zest, 1 egg plus 1 yolk. set aside.
  • Add the flour, sugar, baking powder and salt in a large bowl and whisk, or simply dump into a food processor.
  • Add egg mixture, mix together or just add if using processor.
  • Add the cold butter. mash with a fork, or chop together with butter knives or mezzaluna. If using food processor, pulse a few times until well combined.The mixture will seem dry and mealy. That is correct.
  • Dump the crust mixture unto a marble pastry board or lightly floured surface and knead until you can comfortable make a ball. It will seem very crumbly at first, have patience. If you absolutely have to add a teaspoon of lemon juice to moisten dough.
  • Wrap up the dough ball with plastic wrap and place in refrigerator for at least an hour.
  • Preheat oven to 350 degrees F.
  • Roll out the chilled dough on a lightly floured surface until you have a circle larger than your pie pan by at least a couple inches on each side.
  • Roll the crust gently into the rolling pin to help transfer it to the pie pan. Tuck to into the pan and trim off excess dough. If you have any tears in the crust simply fill them in and smooth out. The dough is forgiving.
  • Prick the bottom of the crust with the tines of a fork every inch or so. If you have pie weights spread them over bottom of crust.
  • Bake the crust for 8-10 minutes. It will be cooked through, but not starting to brown.
  • While baking the crust, start making the crust. Begin by whisking together the eggs and extra white in a large bowl.
  • Add the rest of the filling ingredients and mix together with a wooden spoon or spatula until smooth enough to finish mixing with a whisk.I do not recommend using an appliance for this step. It is best done by hand, so as to not break down the ricotta too much.
  • Pour the filling batter into the crust.
  • Bake for 45-55 minutes. It is done when roughly halfway to the center is set, but middle is still jiggly.
  • After baking allow the pie to cool fully before serving. Place in refrigerator once fully cooled.

1/4 lb vermicelli
1 tablespoon olive oil
1/3 cup finely chopped onion
4 garlic cloves, minced
1 cup grated romano cheese or 1 cup parmesan cheese
3 eggs, divided
15 ounces ricotta cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
26 ounces spaghetti sauce

Steps:

  • Break vermicelli into thirds and cook,& drain.
  • Saute onion and garlic in oil until tender. Mix with vermicelli, 1/2 Cup Romano and 1 egg.
  • Press into bottom of well greased 9" springform pan.
  • Mix 2 egg yolks, ricotta, spinach, and 1/2 cup romano.
  • Spread over pasta layer.
  • Beat 2 egg whites till stiff. Fold in 1 1/2 cups pasta sauce.Pour on top.
  • Bake at 350º 50-60 minute till set.

This is an old Italian recipe for a pie with a sweet crust--just like from the old country. My in-laws are Italian and they say that this is the best pie. It is always requested for Christmas. Mini chocolate bits and lemon rind can be mixed into the batter.

12 large eggs eggs
2 cups white sugar
2 teaspoons vanilla extract
3 pounds ricotta cheese
¼ cup miniature semisweet chocolate chips, or to taste
4 cups all-purpose flour
5 teaspoons baking powder
1 cup white sugar
½ cup shortening, chilled
1 tablespoon shortening, chilled
4 large eggs eggs, lightly beaten
1 teaspoon vanilla extract
1 tablespoon milk

Steps:

  • Beat the 12 eggs, 2 cups sugar and vanilla extract together in a large bowl. Stir in the ricotta cheese and the chocolate chips, if using (see Cook's Note). Set aside.
  • Combine the flour, baking powder, and 1 cup sugar together. Cut in 1/2 cup plus 1 tablespoon shortening until the mixture resembles coarse crumbs. Mix in 4 beaten eggs and 1 teaspoon vanilla extract. Divide dough into 4 balls, wrap in plastic, and chill for at least 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C). Grease two deep-dish pie plates.
  • Roll out 2 of the balls to fit into the pie pans. Do not make the crust too thick, as it will expand during cooking. Do not flute the edges of the dough. Roll out the other 2 balls of dough and cut each into 8 narrow strips for the top of the crust. (Alternately, you can use cookie cutters and place the cutouts on the top of the pies.)
  • Pour the ricotta filling evenly into the pie crusts. Top each pie with 8 narrow strips of dough or cookie cut-outs. Brush top of pie with milk for shine, if desired. Place foil on the edge of crust.
  • Bake in preheated oven for 20 to 30 minutes; remove foil. Rotate pies on the rack so they will bake evenly. Continue to bake until a knife inserted in the center of each pie comes out clean, 25 to 30 minutes more. Cool completely on wire racks. Refrigerate until serving.

This is my version of a savory pasta pie. Don't let the number of steps intimidate you. It really is an easy dish to make and oh so delicious!

1/2 lb vermicelli or spaghetti, broken into 3rds, cooked and drained.
1/3 c onion, finely chopped
4 clove garlic, finely minced
1 Tbsp olive oil
1 c grated, fresh romano cheese, divided
3 eggs
1 (15-16 oz) container ricotta cheese
1 pkg (10 oz) frozen chopped spinach, thawed and well drained
1/2 tsp salt
1/4 tsp pepper
1 jar(s) (24-26 oz) pasta sauce, your favorite (you could even use pizza sauce)

Steps:

  • 1. While pasta is cooking, saute onion and garlic in olive oil over medium heat until tender, about 5 minutes.
  • 2. Drain pasta and place in a small mixing bowl. Add onion and garlic mixture and mix well. Set aside to cool for a few minutes.
  • 3. Thaw spinach and drain well. (place in a strainer and press liquid out using a spoon)
  • 4. When pasta mixture is warm, not hot, add 1 slightly beaten egg, and 1/2 cup grated romano. Mix well.
  • 5. Press pasta mixture into a 9", well greased, spring form pan.
  • 6. Separate the yolks of 2 eggs from the whites. Reserve the egg whites. Combine the 2 egg yolks, ricotta cheese, spinach, salt and pepper and rest of the romano cheese.
  • 7. Spread the ricotta mixture over the pasta layer.
  • 8. In a small mixing bowl, beat the egg whites just until stiff, not dry.
  • 9. Fold egg whites into 1 1/2 cups pasta sauce. Spoon over spinach layer.
  • 10. Bake at 350 degrees, for 50-60 minutes or until set. Let stand 10 minutes.
  • 11. Heat remaining pasta sauce and serve with the pie.

1/2 pound ground beef or pork, or a combination
Kosher salt and freshly ground black pepper
1/2 small onion, finely chopped
1 tablespoon tomato paste
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
2 cloves garlic, thinly sliced
One 28-ounce can tomato puree
Kosher salt
2 tablespoons olive oil
1 pound rigatoni
1 1/2 cups whole-milk or part-skim ricotta
1/2 cup grated Parmesan
1 large egg, beaten
Kosher salt and freshly ground black pepper
8 ounces part-skim mozzarella, grated
1/2 cup grated Parmesan
1/4 cup fresh Italian flat-leaf parsley leaves, roughly chopped (optional)

Steps:

  • For the meat sauce: Heat the oil in a large saucepan over medium-high heat. Add the ground meat, a large pinch of salt and a few grinds of pepper. Cook, stirring and breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and cook, stirring frequently, until soft and lightly browned, 8 to 10 minutes. Add the tomato paste, oregano, red pepper flakes and garlic and cook, stirring, until the tomato paste darkens to a brick red, about 1 minute. Add the tomato puree, 3/4 cup water, 1/2 teaspoon salt and a few grinds of pepper. Bring to a high simmer, then adjust to a low simmer. Cover the pan and cook for 30 minutes. (You can make and cool the sauce the day before. Reheat before using the next day.)
  • For the pasta: Meanwhile, bring a large pot of generously salted water to a boil. Grease a 9-inch springform pan with 1 tablespoon oil. Cook the pasta until slightly less than al dente, about 8 minutes. Drain and toss with the remaining tablespoon oil, then spread out in a single layer on a rimmed baking sheet.
  • Spread 1/4 cup of the meat sauce on the bottom of the prepared pan. Stand the rigatoni on their ends in the pan until it is completely filled.
  • For the ricotta filling: Stir together the ricotta, Parmesan, egg, 1 teaspoon salt and a few grinds of pepper. Transfer the filling to a pastry bag or resealable plastic bag, snip off just enough of the tip to make a small opening and pipe into each rigatoni tube. Pipe small mounds of any leftover ricotta mixture on top of the pasta and spread out into a thin layer. (You can cook and fill the pasta the day before.)
  • Preheat the oven to 375 degrees F. Put the filled springform pan on a foil-lined baking sheet to catch drips. Pour 2 cups of the meat sauce over the pasta, spreading it with the back of a spoon so that it drips in between the noodles. Top with the mozzarella and Parmesan.
  • Cover the pan with foil, doming it slightly to avoid touching the cheese. Bake for 20 minutes. Uncover the pan and continue cooking until the top is golden brown and bubbly, about 30 minutes more. Let the pasta cool for 45 minutes (do not skip this part or your noodles will fall apart when serving!). Sprinkle with parsley, if using, then carefully remove the sides of the pan. Cut the pie into wedges and serve with the reserved meat sauce on the side.
