Steps:

  • In large bowl, beat butter and sugar with electric mixer on medium speed until creamy. Beat in egg and vanilla. On low speed, beat in 2 1/4 cups flour, the baking powder and salt until dough forms. Divide dough in half (about 1 1/4 cups each); place 1 portion in medium bowl.

Wrap each portion of dough in waxed paper; refrigerate 30 minutes.

  • In small microwavable bowl, microwave remaining 1 cup chocolate chips and the shortening uncovered on High 60 to 90 seconds or until melted, stirring twice. Stir until melted. Dip one edge of each cookie in chocolate. Place on Reynolds Parchment Paper; let stand until set, about 1 1/2 to 2 hours.

Tips:

  • Use high-quality chocolate chips for the best flavor. Semi-sweet or dark chocolate chips work well.
  • If you don't have a candy thermometer, you can test the temperature of the sugar syrup by dropping a small amount into a cup of cold water. If the syrup forms a soft ball, it is ready.
  • Make sure to grease the baking pan well before pouring in the candy mixture. This will help prevent the candy from sticking.
  • Let the candy cool completely before cutting it into pieces. This will help prevent the candy from crumbling.
  • Store the candy in an airtight container in a cool, dry place. It will keep for up to 2 weeks.

Conclusion:

Layered mint chocolate candy is a delicious and easy-to-make treat that is perfect for any occasion. With its creamy mint filling and rich chocolate coating, it is sure to be a hit with everyone who tries it. So next time you are looking for a sweet treat, give this recipe a try.
