Tips:

  • Prep your ingredients: Chop, dice, and measure all of your ingredients before you start cooking to ensure a smooth and efficient cooking process.
  • Choose the right tortillas: Look for high-quality corn or flour tortillas that are soft and pliable. This will make them easier to layer and will prevent them from cracking.
  • Use a variety of fillings: This recipe is a great opportunity to use up leftover cooked meats, vegetables, and cheeses. Feel free to experiment with different combinations to find your favorite.
  • Don't overcook the tortillas: When frying the tortillas, keep a close eye on them and remove them from the oil as soon as they are golden brown. Overcooked tortillas will be dry and brittle.
  • Layer the pie carefully: Start with a layer of tortillas, then add a layer of filling, and continue layering until you reach the top of the baking dish. Be sure to press down on each layer gently to ensure that the pie holds together.
  • Bake the pie until golden brown: Bake the pie for about 30 minutes, or until the top is golden brown and the cheese is melted and bubbly.
