Provided by GrandmaIsCooking

Categories     One Dish Meal

Time 50m

Yield 12 serving(s)

Number Of Ingredients 9

3 (10 ounce) packages frozen chopped broccoli, cooked according to package directions (or 2 16 ounce bags)
3 boneless skinless chicken breasts, cooked & cut up
1 cup mayonnaise
1 cup sour cream
1/2 cup onion, finely chopped
2 cups cheddar cheese, shredded
1 cup sliced water chestnuts
1 1/2 cups Ritz crackers, crumbled
1/2 cup butter, melted

Steps:

  • Line bottom of 9x13 glass baking dish with cooked broccoli.
  • Top broccoli with cut-up cooked chicken.
  • Stir together mayonnaise, sour cream, and chopped onion and spread this mixture over broccoli.
  • Sprinkle the cheese over the previous layer, then layer with the sliced water chestnuts.
  • For topping, combine the Ritz cracker crumbs and melted butter and sprinkle over the casserole.
  • Bake for 30 minutes at 350 degrees (Fahrenheit). Serve hot.

Tips:

  • Choose the right rice. Long-grain rice, such as basmati or jasmine, is best for this casserole because it won't get mushy.
  • Cook the rice according to the package directions. Be sure to rinse the rice well before cooking to remove the starch.
  • Use fresh or frozen broccoli. If using frozen broccoli, thaw it completely before adding it to the casserole.
  • Don't overcook the broccoli. It should be tender but still have a little bit of crunch.
  • Use a good quality cheese. A sharp cheddar or Gruyère cheese will give the casserole the best flavor.
  • Don't skimp on the butter. Butter adds richness and flavor to the casserole.
  • Bake the casserole until it's bubbly and golden brown. This usually takes about 30 minutes.
  • Let the casserole cool for a few minutes before serving. This will help it to set and make it easier to slice.

Conclusion:

This layered broccoli rice casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover rice and broccoli. With its creamy cheese sauce, tender broccoli, and fluffy rice, this casserole is sure to be a hit with your family and friends.
