Time 7m

Yield 4 serving(s)

Number Of Ingredients 8

6 stalks fresh lavender blossoms
2 teaspoons orange zest, finely grated
2 garlic cloves, crushed
2 teaspoons honey
flaked sea salt
30 ml olive oil
2 teaspoons fresh thyme, chopped
2 teaspoons fresh marjoram, chopped

Steps:

  • Strip all flowers from the stems. Place in a bowl and add the orange zest, garlic, honey and salt, to taste. Combine well. Add the olive oil and herbs and mix.
  • Spread mixture over chosen meat. If the fish or chicken is very thick, make regular slashes and massage marinade into these. Leave to marinate for minimum of 20 minutes before grilling (broiling) or baking, as desired.

Tips:

  • Make sure to use fresh lavender for the best flavor. Dried lavender can be used, but it will not be as flavorful.
  • If you don't have fresh lemon juice, you can use bottled lemon juice. However, fresh lemon juice will give the marinade a brighter, more citrusy flavor.
  • You can adjust the amount of olive oil in the marinade depending on your preference. If you want a more flavorful marinade, use more olive oil. If you want a lighter marinade, use less olive oil.
  • Be sure to marinate the chicken or fish for at least 30 minutes, but no longer than 24 hours. This will give the marinade time to penetrate the meat and infuse it with flavor.
  • When grilling the chicken or fish, be sure to cook it over medium heat. This will help to prevent the meat from drying out.

Conclusion:

Lavender marinade is a delicious and easy way to add flavor to your chicken or fish. The marinade is made with fresh lavender, lemon juice, olive oil, garlic, and salt and pepper. The chicken or fish is marinated for at least 30 minutes, then grilled or roasted. The result is a tender, flavorful dish that is sure to please everyone at your table.
