Steps:
- 1. combine honey and lavender in a small sauce pan cook over medium heat for 8 minutes, stir constantly
- 2. using a small wire mesh strainer pour infused honey into a small jar or bowl, allow to cool
- 3. Use as you would regular honey, I wait for mine to cool and then transfer it back into the original honey bottle
- 4. Be sure not to cook over the 8 minutes, warming the honey does change the consistency to a slightly thicker texture but it is not really noticeable,
Tips:
- Choose the right lavender: Culinary lavender varieties, such as Lavandula angustifolia, are best for infusing honey. Avoid using fragrant varieties, as they may overpower the honey's flavor.
- Harvest lavender at the right time: Cut lavender buds just before they fully open, typically in mid-summer. This ensures the strongest flavor and aroma.
- Dry the lavender buds: Spread the lavender buds in a single layer on a baking sheet and let them dry in a warm, dry place for a few days. Alternatively, you can dry them in a dehydrator at a low temperature.
- Use a jar with a tight-fitting lid: This will help to preserve the honey's flavor and aroma.
- Store the honey in a cool, dark place: This will help to maintain its quality and prevent it from crystallizing.
Conclusion:
Lavender-infused honey is a versatile and flavorful ingredient that can be used in a variety of recipes. It can be drizzled over pancakes, waffles, and yogurt, or used as a glaze for roasted vegetables and meats. It also makes a great addition to salad dressings, marinades, and cocktails. With its beautiful color and delicate floral aroma, lavender-infused honey is sure to impress your friends and family.
