1 cup all-purpose flour
1 ½ teaspoons culinary-grade lavender buds, roughly chopped
1 teaspoon baking powder
¼ teaspoon salt
¾ cup white sugar
3 tablespoons unsalted butter, room temperature, cubed
1 large egg, slightly beaten
2 tablespoons lemon juice
1 tablespoon lemon zest
½ cup buttermilk
1 cup loosely packed confectioners' sugar
5 teaspoons lemon juice
1 teaspoon lemon zest
1 tablespoon culinary-grade lavender buds, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup cupcake tin with cupcake liners.
  • Whisk flour, chopped lavender, baking powder, and salt together in a bowl. Set aside.

3/4 cup tangerine juice
1/3 cup canola oil

1 1/2 tablespoon poppy seeds
3 cups powdered sugar
1/2 cup vegetable shortening, such as Organic Spectrum

3 tangerines, peeled and slices separated, for garnish

Steps:

  • For the cake: Preheat the oven to 350 degrees F 15. Line a cupcake pan with 12 regular-size cupcake liners or 24 mini cupcake liners.
  • For the cake: Mix the flour, granulated sugar, baking soda and salt in a medium bowl. Combine the tangerine juice, canola oil, vinegar, orange extract and vanilla extract in a 5-quart mixer with a paddle attachment on first speed. Add the dry ingredients. Add the poppy seeds. 1/4 cup dried lavender flowers
2 -4 tablespoons boiling water
1 cup unsweetened almond milk
1 teaspoon apple cider vinegar
1 1/4 cups all-purpose flour
2 tablespoons cornstarch
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
3/4 cup sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 tablespoon pre-steeped lavender water
1/2 teaspoon lemon juice
2 tablespoons almond milk
2 sticks earth balance vegan butter, softened but not warm
3 cups powdered sugar

Steps:

  • Place the dried lavender flowers in a small bowl or custard dish. Start with 2 Tbs of boiling water to cover them. Add more if needed to just cover the flowers. Steep 10-20 minutes or until the water is purplish-gray. Strain the flowers, keep the water. Set this aside to cool.
  • Preheat oven to 350 degrees. Spray/line muffin pan.
  • Combine the almond milk and apple cider vinegar together with a fork or a whisk. You may notice some curdling, this is ok.
  • In a bowl, sift together the flour, corn starch, baking power, baking soda and salt.
  • In another bowl, mix the oil, sugar, vanilla and lemon and 2 Tbs of the lavender water.
  • Add the almond milk/vinegar mixture to the oil/ sugar mixture, and mix well.

  • Add more powered sugar or almond milk as necessary to create a creamy texture that can be piped onto cupcakes.
  • Place frosting in a pastry bag with decorating tip. You can also use a quart-sized Ziploc bag with a small hole clipped in the lower corner to pipe the frosting onto your cupcakes.

2 1/2 tablespoons dried lavender buds
2/3 cup cold milk
FROSTING:
1 stick unsalted butter, softened
1 (8-ounce) package cream cheese, softened
4 cups powdered sugar
2 teaspoons vanilla extract
2 tablespoons honey, plus a little extra for drizzling

  • Preheat oven to 350°F. Line muffin tins with cupcake liners. In the bowl of an electric mixer, cream the softened butter and sugar together. Add the eggs one at a time, beating after each egg. Stir in the vanilla and food coloring. In a separate bowl, stir together the flour, baking powder, and salt. Chop the dried lavender buds into fine, small pieces. Stir into the flour mixture.
