LAVENDER AND LEMON BISCOCHITOS

Lavender and Lemon Biscochitos image

Biscochitos are the state cookie for our home state of New Mexico. They are traditionally made with anise seeds, but I substituted lavender and lemon in this biscochitos recipe. The result is intriguing and delicious! I have also made these with lemon and dried thyme and they were scrumptious. -Marla Clark, Albuquerque, New Mexico

Tips:

  • To achieve perfectly round cookies, use a cookie scoop to portion the dough. This will ensure uniform size and shape.
  • Chilling the dough for at least 30 minutes before baking will help prevent the cookies from spreading too much.
  • For a more intense lavender flavor, use culinary lavender buds instead of extract. Just be sure to grind them finely before adding them to the dough.
  • If you don't have a lemon zester, you can use a microplane grater to get the zest.
  • Be careful not to overmix the dough, as this can result in tough cookies.
  • Bake the cookies until the edges are just beginning to brown. Overbaking will make them dry and crumbly.

Conclusion:

These lavender and lemon cookies are a delightful treat that are perfect for any occasion. With their delicate floral flavor and bright citrus notes, they are sure to be a hit with everyone who tries them. Follow the tips provided in this recipe to ensure perfect results every time you bake them.
