1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

1 cup oatmeal
2 eggs, beaten
1/4 teaspoon mustard
1/2 cup minced onion
1/2 cup milk
2 lbs hamburger
2 tablespoons Worcestershire sauce
1 1/2 teaspoons salt (I like to use garlic salt)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 cup brown sugar
2 teaspoons mustard
1/2 cup ketchup

Steps:

  • Combine eggs, oatmeal, milk, worcestershire sauce, salt, garlic powder, pepper, mustard, onion. Mix with hamburger. Pat into loaf pan. Bake @350 for one hour. Combine ketchup, brown sugar and mustard. Spread over meatloaf. Bake 20-25 minutes longer.

Ground Beef
1/2 small onion, finely chopped
2 tablespoons plain dried breadcrumbs
2 tablespoons Dijon mustard
1 large egg, lightly beaten
1 teaspoon Italian seasoning
1/4 teaspoon salt
2 teaspoons minced chipotle
peppers in adobo sauce
6 tablespoons ketchup

Steps:

  • Directions 1 Combine first 7 ingredients and 1 teaspoon chipotle peppers in adobo sauce or 1/2 teaspoon dried chipotle seasoning. Shape into a loaf. Wrap in aluminum foil and chill 1 hour or overnight. 2 Poke fork-size holes on both sides of foil. Grill meatloaf in foil package, covered with grill lid, over medium-high heat 10 to 15 minutes on each side or until a meat thermometer inserted into thickest portion registers 155 degrees F. 3 Stir together ketchup and remaining chipotle peppers or chipotle seasoning. Spoon sauce evenly over meatloaf and cover with aluminum foil for 5 minutes to heat through. Serve immediately
