Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
LAURA'S MEATLOAF
This is one of the first meals I made when I started out cooking for my husband. I was lucky to come across this recipe for meatloaf in a church cookbook because it is one of our favorites even today. I have tried other meatloafs but none of them taste like this one...

Tips:
- Use a combination of ground beef and ground pork: This will give your meatloaf a richer flavor and juicier texture.
- Don't overmix the meatloaf mixture: Overmixing can make the meatloaf tough. Mix just until the ingredients are combined.
- Use a variety of seasonings: Season your meatloaf with your favorite herbs and spices. Some good options include garlic, onion, paprika, thyme, and oregano.
- Don't forget the breadcrumbs: Breadcrumbs help to bind the meatloaf mixture together and keep it moist.
- Use a loaf pan that is just big enough to hold the meatloaf mixture: This will help to prevent the meatloaf from shrinking too much during cooking.
- Cook the meatloaf at a low temperature: This will help to keep it moist and prevent it from drying out.
- Let the meatloaf rest before slicing: This will help to keep the juices in the meatloaf and prevent it from falling apart.
