Yield 8

Number Of Ingredients 8

1 (16 ounce) package frozen California blend vegetables
2 boneless skinless chicken breasts (cooked and cubed)
1 (10.75 ounce) cream of potato soup
1 cup milk
1 cup shredded cheddar cheese
1 cup french fried onions
1/2 teaspoon seasoned salt
1 (8 ounce) package refrigerated crescent roll dough sheet

Steps:

  • In a large bowl combine the vegetables, chicken, soup, milk, cheese, onions and seasoned salt.
  • Carefully spoon into a 9 x 13 inch baking dish that has been sprayed with non stick cooking spray.
  • Bake uncovered at 350 degrees for 20 minutes.
  • While it is cooking spread out the roll dough into a big sheet. Using a pizza cutter cut 4 strips from the dough lengthwise. With the remaining dough, cut into 6 equal shorter strips.
  • Remove dish from oven after 20 minutes and quickly do 4 lengthwise strips and 6 strips width wise. Quickly weave them over the warm casserole to give it a lattice look.
  • Place back in the oven for another 15 minutes, or until the top crust is golden brown.

Tips:

  • To make the perfect lattice top, roll out the pie dough into a 12-inch circle. Use a sharp knife or pastry wheel to cut the dough into 1-inch wide strips.
  • Weave the strips of dough over and under each other, starting from the center and working your way out. Trim any excess dough from the edges.
  • To prevent the dough from browning too quickly, brush it with milk or cream before baking.
  • For a golden brown crust, sprinkle the dough with sugar before baking.
  • To make sure the stew is cooked through, simmer it for at least 30 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve the stew hot, with a side of crusty bread or mashed potatoes.

Conclusion:

This hearty and flavorful chicken stew is the perfect comfort food for a cold winter day. The tender chicken, vegetables, and rich gravy are all wrapped up in a flaky, golden brown lattice top.
