Categories     Beef     Dinner

Yield 5 -6 servings

Number Of Ingredients 15

1/2 small onion, coarsely chopped
1/2 small carrot, coarsely chopped
1 C dried bread crumbs
1/8 C chopped parsley
2 1/2 tsp dried basil
2 1/2 tsp dried thyme
1 1/2 tsp freshly ground pepper
4 tsp chopped garlic
2 eggs, beaten
1/2 C milk
salt
1 tbsp tomato paste
2 lbs ground beef
3/4 C canned cranberry sauce
3/4 C brown sugar, packed

Steps:

  • Combine first 13 ingredients and mix until thoroughly incorporated. Spoon meat mixture into a greased 9 x 5-inch loaf pan, dividing evenly. Do not tightly pack meat into pans. Smooth tops. Mix cranberry sauce with brown sugar until lumps are eliminated. Spread over loaves. Bake at 350°F until done, 45 - 55 minutes.

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter flavor and more nutrients than frozen or dried cranberries.
  • Don't overmix the meatloaf. Overmixing will make the meatloaf tough.
  • Use a loaf pan that is at least 9x5 inches. A smaller loaf pan will make the meatloaf too thick and it will not cook evenly.
  • Bake the meatloaf at 350 degrees Fahrenheit for 1 hour and 15 minutes. If you are using a meat thermometer, the meatloaf is done when it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing. This will help the meatloaf to hold its shape and make it easier to slice.

Conclusion:

Lasher's Cranberry Meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of ground beef, pork, and cranberries gives the meatloaf a moist and flavorful texture, while the cranberry sauce adds a sweet and tangy flavor. This meatloaf is sure to be a hit with your family and friends.
