4 lasagna noodles
4 large green bell peppers, halved and seeds and veins removed
19 ounces mild Italian sausage (such as Johnsonville®)
1 small onion, chopped
1 (15 ounce) can tomato sauce
1 clove garlic, minced
½ teaspoon dried oregano
½ cup ricotta cheese
1 egg
2 tablespoons grated Parmesan cheese
1 teaspoon dried basil
1 cup shredded mozzarella cheese

  • Preheat the oven to 350 degrees F (175 degrees C). Line a large baking sheet with aluminum foil; place bell pepper halves on top.
  • Bake in the preheated oven until peppers soften, about 20 minutes.

  • Remove peppers from oven and pour off any excess liquid. Leave oven on.
  • Whisk ricotta cheese, egg, Parmesan cheese, and basil together in a small mixing bowl. Layer each bell pepper half with 2 tablespoons sausage mixture, 1 noodle piece, and 1 tablespoon ricotta mixture. Repeat layers and sprinkle mozzarella cheese on top of each pepper. Place stuffed peppers on the baking sheet.
  • Bake stuffed peppers in the preheated oven until cheese is browned and bubbly, about 25 minutes.

½ cup ricotta cheese
½ cup cooked white rice

Tips:

  • Choose the right peppers: Bell peppers with a flat bottom will stand upright better when stuffed.
  • Prepare the peppers properly: Cut the tops off the peppers and remove the seeds and ribs. You can also pre-bake the peppers for 10-15 minutes to soften them.
  • Make sure the filling is cooked through: The filling should be cooked through before you stuff the peppers. You can cook the filling in a skillet or in the microwave.
  • Pack the filling tightly: Pack the filling tightly into the peppers so that they hold their shape when baked.
  • Bake the peppers at a high temperature: Bake the peppers at a high temperature (400 degrees Fahrenheit or 200 degrees Celsius) for 20-25 minutes, or until the peppers are tender and the filling is bubbly.
  • Let the peppers cool before serving: Let the peppers cool for a few minutes before serving so that they are easier to handle.

Conclusion:

Lasagna stuffed peppers are a delicious and easy-to-make meal that is perfect for a weeknight dinner. They are also a great way to use up leftover lasagna. With a few simple tips, you can make sure that your lasagna stuffed peppers are perfect every time.
