Cooks like a casserole, tastes like a lasagna! This simple recipe takes out the complication of gourmet lasagnas and serves your family in less than an hour with the same great taste.

Number Of Ingredients 9

1 1/2 lbs extra lean ground beef
1 small onion, chopped
2 garlic cloves, minced
1 lb elbow macaroni
32 ounces prepared spaghetti sauce (I have used Prego or made my own)
1 (13 1/2 ounce) can spinach
6 ounces provolone cheese, about 8 slices
1 1/2 cups mozzarella cheese, shredded
1 cup parmesan cheese, shredded

Steps:

  • Prepare water to boil and pre-grease a deep casserole dish.
  • Brown beef, onions and garlic in a medium sized sauce pan (if you don't like your onions a tad crisp, saute your onions and garlic until soft, prior to adding the beef).
  • Add spaghetti sauce AND spinach to the beef, onion and garlic; cover and simmer for 15 minutes.
  • Pre-heat oven to 350, and add noodles to boiling water and cook until al dante.
  • Drain noodles and return to pot.
  • Pour the sauce mixture into the noodles, RESERVING two or so cups, and mix thoroughly. Set remaining sauce aside.
  • Pour half of the pasta mixture into the pre-greased casserole dish, layer with 6 slices of provolone cheese, pour in the remaining pasta, break the remaining provolone into pieces, layer, and sprinkle mozzarella cheese on top. Finally, pour on the reserved sauce.
  • Bake, covered, on 350 for 35 minutes.
  • Uncover, sprinkle parmesan cheese on top, and bake for an additional 5 minutes.

1 pound ground beef
1/4 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper, divided
1 pound medium pasta shells, cooked and drained
4 cups shredded part-skim mozzarella cheese, divided
3 cups 4% cottage cheese
2 large eggs, lightly beaten
1/3 cup grated Parmesan cheese
2 tablespoons dried parsley flakes
1 jar (24 ounces) pasta sauce

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside. , In a large bowl, combine the pasta, 3 cups mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper. Transfer to a greased shallow 3-qt. or 13x9-in. baking dish. Top with beef mixture and spaghetti sauce (dish will be full). , Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, until bubbly and cheese is melted, 15 minutes longer. Let stand for 10 minutes before serving. Freeze option: Sprinkle casserole with remaining mozzarella cheese. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

A really simple casserole that my family loves. It tastes like lasagna but is half the work. It makes a lot, so I usually divide it into 3 dishes and freeze two.

1 lb ground beef
1/4 c onion, chopped
1/2 tsp salt
1/2 tsp pepper
1 16-oz pkg pasta shells
6 c mozzarella cheese
24 oz cottage cheese
2 eggs
1/3 c parmesan cheese
2 Tbsp parsley
3 28-oz jar(s) spaghetti sauce

Steps:

  • 1. Assembly instructions: In a skillet, cook beef and onion until meat is no longer pink and onion is tender; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside.
  • 2. In a large bowl, combine pasta, 3 cups of mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper; stir gently. Pour into a greased 13-inch x 9-inch x 2-inch or shallow 3 quart baking dish.
  • 3. Top with beef mixture and spaghetti sauce (dish will be VERY full).
  • 4. To freeze: Cover tightly with foil. Seal additional cheese in package attached to pans.
  • 5. To serve Thaw all day in refrigerator. Baking Instructions: Cover with new layer of foil and bake at 350ºF for 45 minutes. Sprinkle with remaining mozzarella.
  • 6. To serve now: Bake, uncovered, 15 minutes longer or until the cheese is melted ad bubbly. Let stand 10 minutes before serving.

1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes.
