Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid any scrambling during the cooking process.
  • Use a heavy-bottomed pot: This will help to evenly distribute the heat and prevent the rabbit from sticking to the bottom of the pot.
  • Brown the rabbit well: This will help to develop flavor and color.
  • Use a good quality wine: The wine will add flavor to the sauce, so it's important to use a wine that you enjoy drinking.
  • Don't overcrowd the pot: If you overcrowd the pot, the rabbit will not brown evenly and the sauce will be too thin.
  • Simmer the rabbit until it is tender: This will take about 1 hour and 15 minutes.
  • Serve the rabbit with a variety of sides: Some good options include mashed potatoes, roasted vegetables, or a green salad.
