This is a great alternative to regular meatballs. I have served these many times at cocktail parties, and they have always been a hit! The sauce adds a nice touch, but I have also served them with Greek marinade and plain.

CRISPY LAMB MEATBALLS WITH CHICKPEAS AND EGGPLANT

Crispy Lamb Meatballs With Chickpeas and Eggplant image

This dish does not shy away from fat in the best way possible. From the lamb to the olive oil to the yogurt used as a sauce at the end, this is a one-skillet meal that feels worthy of a weekend spread. Since these meatballs aren't made with binders like eggs or bread, they're truly best made with a fatty meat like lamb. If you decide to use pork or beef instead, make sure it's a mixture with a higher fat content or the meatballs could turn out dry. Since eggplant can really soak up oil when pan-frying, feel free to add more to the skillet as the slices cook.

Provided by Alison Roman

Categories     dinner, weekday, meat, meatballs, main course

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 1/2 pounds ground lamb, pork or beef
1 1/2 teaspoons fennel seeds
2 garlic cloves, finely grated
1 teaspoon red-pepper flakes, plus more as needed
Kosher salt and freshly ground black pepper
8 tablespoons olive oil, plus more as needed
1 medium eggplant, sliced about 1/4-inch thick
2 (15-ounce) cans chickpeas, drained and rinsed
1 cup full-fat Greek yogurt, labneh or sour cream
3 cups mixed greens (the more peppery, the better)
1 cup cilantro, leaves and tender stems
1 lemon, halved

Steps:

  • Combine lamb, fennel seeds, garlic and 1 teaspoon red-pepper flakes in a medium bowl. Season with 1 1/2 teaspoons kosher salt, and black pepper to taste, and mix until everything is well combined and the spices are evenly distributed.
  • Using your hands, roll lamb mixture into balls about 1 1/2 to 2 inches in diameter, placing them on a parchment-lined baking sheet or plate. You should have about 12 meatballs.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add meatballs - work in batches if your skillet can't comfortably fit them all without crowding - and cook, gently rotating them occasionally so they more or less brown on all sides while keeping a vaguely round shape, 8 to 10 minutes. (Do not stress about this part; they will be delicious no matter what shape they are.) After they are evenly browned and cooked through, transfer them to a plate, leaving the fat and any browned bits behind.
  • Add 4 tablespoons oil to the skillet and, working in batches, if needed, add eggplant slices in an even layer, seasoning with salt and pepper. Cook the slices, flipping them once, until they are browned on both sides, about 6 to 8 minutes. Add more oil as needed. After eggplant slices are cooked and browned, transfer them to the plate with the meatballs.
  • Add remaining 3 tablespoons oil to the skillet, along with chickpeas. Season with salt and pepper, and cook, shaking the skillet and stirring occasionally, until chickpeas are nicely browned, 3 to 5 minutes. (They won't exactly crisp; you're just looking to take the edge off and get them nicely seasoned.)
  • Season yogurt with salt and pepper and smear onto the bottom of a large plate or serving platter. Top with meatballs, eggplant and chickpeas. Scatter with greens and cilantro, and then squeeze lemon halves over everything before serving.

POSTRIO'S GOLDEN LENTIL SOUP WITH LAMB MEATBALLS

Postrio's Golden Lentil Soup with Lamb Meatballs image

The relatively short cooking time of these lentils makes this soup simple to prepare. Golden lentils have a bright orange color and can be found in many health food stores. Your family and friends will be delighted with the result and may be a little surprised to find that they are eating lentil soup.

Provided by Food Network

Categories     main-dish

Time 1h25m

Yield 8 to 10 servings

Number Of Ingredients 41

3 tablespoons olive oil
1 1/2 cups chopped red onion
1/2 cup diced carrot
5 cloves garlic, chopped
1 tablespoon turmeric
2 teaspoons ground cumin
1/2 celery stalk
1 branch fresh parsley
1 branch fresh thyme
1 pound golden lentils (or regular lentils, if not available)
10 cups chicken stock, heated, recipe follows, or store-bought chicken broth
Salt and freshly ground pepper
Pinch chili pepper flakes
1/2 cup fresh bread crumbs
1/4 cup milk
1 pound ground lamb
1 cup blanched almonds, toasted and ground
1/3 cup chopped onion
1/3 cup raisins, coarsely chopped
1 egg, lightly beaten
3 cloves garlic, minced
2 tablespoons chopped fresh parsley leaves
1 tablespoon chopped fresh cilantro leaves
1/4 teaspoon chili pepper flakes
Salt and freshly ground pepper
2 tablespoons olive oil, plus more for drizzling
1 cup plain yogurt
1 tablespoon chopped fresh mint leaves
1/2 teaspoon lemon zest
1/2 teaspoon fresh lemon juice
1 teaspoon honey
Pinch salt
5 to 6 pounds chicken bones, including necks and feet, coarsely chopped
3 1/2 quarts cold water
1 medium carrot, peeled and sliced
1 medium onion, quartered
1 small celery stalk, sliced
1 small leek, sliced
3 sprigs parsley with stems
1 bay leaf
1/2 teaspoon whole white peppercorns

Steps:

  • Prepare the soup: In a large saucepan, heat the olive oil. Add the onion, carrot, garlic, turmeric, and cumin. Saute over high heat until the onions are glassy, about 5 minutes. Meanwhile, make a bouquet garni by tying together the celery, parsley, and thyme, and add to pan. Stir in the lentils and the chicken stock, season lightly with salt, pepper, and chili flakes, and bring to a boil. Reduce the heat and simmer for 25 to 30 minutes, or until the lentils are tender. Skim as necessary.
  • Meanwhile, prepare the meatballs: Preheat the oven to 350 degrees F.
  • In a small bowl, soak bread crumbs in milk. In a mixing bowl, combine the lamb, almonds, soaked bread crumbs, onion, raisins, egg, garlic, parsley, cilantro, and chili pepper flakes. Season lightly with salt and pepper. Drizzle olive oil on the platter you will place the meatballs on and rub oil into the palm of both hands. Form meat mixture into 40 golf ball-size meatballs, each approximately 1-inch in diameter.
  • Heat 2 tablespoons olive oil in a large ovenproof skillet or saute pan. Arrange the meatballs in 1 layer in the pan, quickly sear meatballs over high heat, and then place in the oven. Cook until the meatballs are well browned and firm to the touch, turning to brown all sides, 8 to 10 minutes.
  • Prepare the garnish: In a small bowl, combine all ingredients. Refrigerate until serving time.
  • Return to the soup: Remove the celery bouquet. With an immersion blender, lightly blend soup (you want it to still be a little chunky). Correct seasoning, to taste. Alternatively, transfer 2/3 of the soup to a blender*. Blend until smooth and return to the saucepan.
  • Ladle soup into 8 or 10 soup bowls. Divide the meatballs evenly among the soup bowls and drizzle the yogurt mixture over. Serve immediately.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
  • Place the chicken bones in a 6-quart pot, pour water over to cover, and bring to a rolling boil. Skim off the scum that collects on the top. Add the remaining ingredients, lower the flame, and simmer about 2 hours, skimming as necessary. Strain into a clean bowl and cool. Refrigerate in a covered container for up to 3 days, discarding hardened layer of fat before using or freezing.
  • Yield: about 2 quarts

AROMATIC LAMB MEATBALLS

Aromatic Lamb Meatballs image

Provided by Nigella Lawson : Food Network

Categories     appetizer

Time 1h25m

Yield approximately 78 lamb meatballs

Number Of Ingredients 9

1 pound ground lamb
1/4 cup finely chopped scallions
1/2 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon ground allspice
1 teaspoon salt
3 tablespoons semolina
1 egg
Vegetable oil, for frying

Steps:

  • Put the lamb into a bowl and add the scallions. Sprinkle over the spices, salt, and semolina, and then beat the egg adding to the bowl. Work everything together thoroughly with your hands, and then cover with plastic wrap and leave in the refrigerator for half an hour.
  • Line a baking sheet with plastic wrap and scoop out a scant teaspoon of the mixture. Roll in your hands to form the meatball and place on the lined baking sheet. Have a bowl of cold water beside you to dampen your hands with; this helps them not get too sticky for rolling the meatballs.
  • When you are ready to cook them, heat about 1/2-inch of oil in a frying pan. Line another baking sheet with kitchen towel, and when the oil is hot, fry the meatballs in batches without overcrowding the pan. Cook them for about a minute a side, or until golden brown all over.

1 (13 1/2-ounce) can coconut milk (do not shake)
1 teaspoon ground cumin

1 cup packed chopped cilantro leaves
1 teaspoon tamarind concentrate (sold at Indian grocers) or fresh lemon juice
Kosher salt
Lamb meatballs
1 pound ground lamb
1/2 cup fresh bread crumbs
1 large egg, beaten
1 teaspoon ground cumin
1/2 teaspoon garam masala

Reduce the heat to medium-low and cook, whisking occasionally, until slightly reduced, about 10 minutes.

SPICY LAMB MEATBALLS WITH RAISIN PESTO

Spicy Lamb Meatballs with Raisin Pesto image

Loving meatballs has never been this rewarding. They're gilded with lots of strong spices and set in a cooling swoosh of yogurt and anointed with the sweet brightness of a mint pesto. Sound fancy? Not really. We use ground lamb, which is naturally fatty and can be baked without sacrificing juiciness or a charred crust.

This is a recipe I have not yet tried. but it is from "The Book of Jewish Food" by Claudia Roden, and every single recipe I have made from that book so far has been a winner! This recipe originates in Iraq, and appeared originally in a 13th century Baghdad cookbook.

Yield Makes about 48 meatballs, serving 10 to 12

Number Of Ingredients 26

Spicy Afgan Green Sauce
1 bunch fresh cilantro
1/2 to 1 jalapeño, depending on how spicy you want your sauce
1 cup loosely packed fresh mint leaves
3 cloves garlic
1 cup plain Greek yogurt
2 tablespoons seasoned salt
Juice of 1 lemon
1 teaspoon agave nectar
Meatballs
1 tablespoon cumin seeds (see Notes)
2 tablespoons coriander seeds
Seeds from 4 cardamom pods
Seeds from 2 star anise
1 tablespoon ground turmeric
3 tablespoons seasoned salt
1 tablespoon coarsely ground black pepper
1 teaspoon ground cinnamon
1 teaspoon cayenne
4 to 5 pounds ground lamb (see Notes)
1 medium yellow onion, finely chopped
2 tablespoons peeled, finely chopped fresh ginger
4 cloves garlic, finely chopped
1/2 bunch fresh mint, chopped
1/2 cup crumbled feta cheese
1 cup cooked spinach, chopped

Steps:

  • Make the Spicy Afghan Green Sauce: Combine all the ingredients in a blender or food processor and puree until smooth. This can be done 1 to 3 days in advance. It is best to make the sauce at least 1 day in advance to give the flavors time to blend.
  • Preheat a grill to about 375°F for direct cooking.
  • Make the meatballs: Place the cumin, coriander, cardamom seeds, and star anise in a small skillet over medium heat and toast until fragrant, 2 to 3 minutes. Let cool, then grind in a spice or coffee grinder. Add the turmeric, seasoned salt, black pepper, cinnamon, and cayenne and mix well.
  • Place the ground lamb in a large bowl. Add the spices along with the onion, ginger, garlic, mint, feta, and spinach and mix well, but do not overmix as this will result in a tough texture. Form the mixture into meatballs 1 to 1 1/2 inches in diameter.
  • Place the meatballs on the grill grate and cook for about 14 minutes, or until the internal temperature reaches 160°F on a meat thermometer, rotating the meatballs frequently to ensure that they caramelize evenly.
  • Serve with the dipping sauce.

LEBANESE LAMB MEATBALLS

Lebanese Lamb Meatballs image

An everyday ingredient, ground lamb, is transformed into a tasty Middle Eastern dish in this simple but effective recipe. Very nice in pita bread with hummus.

Provided by English_Rose

Categories     Lamb/Sheep

Time 21m

Yield 4-6 serving(s)

Number Of Ingredients 9

4 ounces onions, chopped
2 ounces parsley
8 -10 fresh mint leaves
1 lb ground lamb
1 ounce bread, crust removed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground black pepper
1 teaspoon salt

Steps:

  • Place the onion, parsley and mint in a food processor. Blend for 30 seconds until smooth. Add the rest of the ingredients.
  • Blend until thoroughly mixed together. Divide this mixture into 24 portions. Using wet hands gently shape into rissoles.
  • Preheat the grill. Place the rissoles on a preheated, lightly oiled baking sheet. Grill for 5-6 minutes or until browned on all sides and cooked through.
  • Serve hot or cold.

Tips:

  • Choose high-quality lamb: Opt for ground lamb that is fresh, finely textured, and has a good fat-to-lean meat ratio (around 80/20) for juicy and flavorful meatballs.
  • Use a variety of seasonings: Enhance the flavor of your meatballs with a blend of spices, such as cumin, coriander, paprika, oregano, and mint. Don't be afraid to experiment and adjust the seasonings to your preference.
  • Incorporate moisture: Add moisture to the meatball mixture by using ingredients like finely chopped onion, grated carrot, or even soaked bread crumbs. This will help keep the meatballs tender and prevent them from becoming dry.
  • Handle the meatball mixture gently: Avoid overworking the meatball mixture, as this can result in tough meatballs. Mix the ingredients just until they are combined, and be gentle when forming the meatballs to prevent them from becoming dense.
  • Cook the meatballs thoroughly: Whether you are baking, pan-frying, or simmering the meatballs, make sure they are cooked through to ensure they are safe to eat. The internal temperature of the meatballs should reach 165°F (74°C).

Conclusion:

Lamb meatballs are a versatile and delicious dish that can be enjoyed in a variety of ways. With the right combination of ingredients, techniques, and cooking methods, you can create juicy, flavorful, and aromatic meatballs that will impress your family and friends. Experiment with different recipes and find the ones that suit your taste preferences.
