Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

light olive oil, for baking
12 lean lamb cutlets
3 cloves garlic, crushed
1 tablespoon grainy mustard
2 tablespoons fresh rosemary, chopped
maldon sea salt
cracked pepper

Steps:

  • Preheat oven to 200c.
  • Sprinkle olive oil over the base of the baking dish.
  • Lay cutlets in the dish, rubbing them with the oil.
  • Cover cutlets with crushed garlic, mustard and rosemary, then season with the salt and pepper.
  • Place in the oven and cook for 25-30 minutes, turning once, until the cutlets ar browned and crispy.
  • If desired, serve on a bed of couscous with your favourite steamed vegetables.

Tips:

  • Choose high-quality lamb cutlets: Look for cutlets that are evenly marbled and have a pinkish-red color. Avoid cutlets that are brown or have excessive fat.
  • Trim the fat: Use a sharp knife to trim any excess fat from the cutlets. This will help to prevent the cutlets from becoming greasy.
  • Marinade the cutlets: Marinating the cutlets in a flavorful marinade will help to tenderize them and add flavor. You can use a variety of marinades, such as olive oil, garlic, herbs, and spices.
  • Cook the cutlets over medium-high heat: This will help to create a nice crust on the outside of the cutlets while keeping the inside tender and juicy.
  • Use a meat thermometer: To ensure that the cutlets are cooked to your desired doneness, use a meat thermometer to check the internal temperature. Lamb cutlets are considered medium-rare at an internal temperature of 135 degrees Fahrenheit, medium at 145 degrees Fahrenheit, and well-done at 160 degrees Fahrenheit.
  • Let the cutlets rest before serving: After cooking, let the cutlets rest for a few minutes before serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful cutlet.

Conclusion:

By following these simple tips, you can create perfectly cooked lamb cutlets that are sure to impress your family and friends.
