TARRAGON-MARINATED LAMB CHOPS WITH PINEAPPLE PECAN SALSA

Tarragon-Marinated Lamb Chops With Pineapple Pecan Salsa image

This is a wonderful grilling recipe from Bobby Flay. The salsa is delicious and complements the lamb chops so well. This makes a lot of salsa, which is how I like it. Feel free to halve the salsa recipe if you prefer. Since baby lamb chops are used, the recipe allows for 4 chops per person. I'm sure the salsa would be delicious over grilled pork or chicken, as well. Enjoy! *Prep time includes marinating in the refrigerator*

LAMB WITH PINEAPPLE MINT SAUCE

Lamb with Pineapple Mint Sauce image

Provided by Claire Robinson

Categories     main-dish

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 7

2 whole racks of lamb (8 chops each), about 2 pounds, frenched
Kosher salt and freshly cracked black pepper
3 tablespoons extra-virgin olive oil, divided
1 fresh pineapple, peeled and cored
2 garlic cloves, minced
1 small bunch fresh mint, tied with kitchen string, plus 1/4 cup leaves, finely chopped
1/2 cup water

Steps:

  • Preheat the oven to 375 degrees F.
  • Trim any excess fat on the lamb racks and season, to taste, with salt and pepper. Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat and put the racks in the hot pan, fat side up. Sear until browned, then flip and sear on the fat side until golden brown. Stand the racks up in the pan, criss-crossing the bones with the fatty side out. Put the pan in the oven to roast until the internal temperature reaches 130 degrees F on an instant-read thermometer, about 15 to 20 minutes. Remove the pan from the oven and let the lamb rest on a cutting board for at least 5 minutes. Slice into single or double chops (2 rib bones).
  • To make the sauce, finely chop the pineapple, reserving any juices that are released (it should resemble canned crushed pineapple). Heat the remaining 1 tablespoon of olive oil in a saucepan over medium heat. Add the garlic and cook until softened, 2 to 3 minutes. Add the pineapple and its juice, the mint bundle and water to the saucepan and simmer over low heat until the pineapple is broken down and the liquid has thickened, about 40 to 45 minutes. Remove the mint bundle and discard; stir the chopped mint into the sauce and transfer to a serving bowl.
  • Serve the lamb chops on a platter topped with the pineapple mint sauce spooned over the top.

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h25m

Yield 8 servings

Number Of Ingredients 13

1/4 cup salted capers, soaked for 30 minutes, drained, coarsely chopped
1/2 cup chopped fresh Italian flat leaf parsley
1/3 cup chopped scallions
1/2 cup chopped fresh mint leaves
1/2 cup fresh lemon juice
2 teaspoons grated lemon peel
1 cup olive oil, preferably extra-virgin
2 teaspoons dried crushed red pepper flakes
3 1/2 teaspoons coarse salt
1 1/2 teaspoons freshly ground black pepper
1 (4 1/2 to 5-pound) butterflied boned lamb shoulder
1 tablespoon minced garlic
Nonstick cooking spray

Steps:

  • Stir the first 7 ingredients and 1 teaspoon red pepper flakes in a large bowl to blend. Whisk in 1 1/2 teaspoons of salt and 1/2 teaspoon of black pepper. Set the salsa verde aside. Place the lamb in a 15 by 10 by 2-inch glass baking dish. Rub the minced garlic, remaining 2 teaspoons of salt, 1 teaspoon of black pepper, and remaining 1 teaspoon red pepper flakes all over lamb. Pour 1/2 cup of salsa verde over the lamb, turning the lamb to coat evenly. Use immediately, or cover the dish and remaining salsa verde separately with plastic wrap and refrigerate up to 1 day.
  • Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat). Grill the lamb until a meat thermometer inserted into the thicker parts registers 130 degrees F for medium-rare, turning occasionally, about 40 minutes. • Cut the lamb across grain into thin slices. Arrange the lamb slices on a platter. Serve the remaining salsa verde alongside.

Tips:

  • Choose high-quality lamb chops: Look for chops that are a deep red color with a good amount of marbling. This will ensure that they are tender and flavorful.
  • Cook the lamb chops to your desired doneness: Rare lamb chops will have a slightly pink center, while medium-rare chops will be slightly pink throughout. If you prefer your chops more well-done, cook them for a few minutes longer.
  • Make sure the pineapple salsa is fresh: The salsa will be best if you use fresh pineapple, cilantro, and red onion. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Serve the lamb chops immediately: The lamb chops will be most delicious if you serve them immediately after they are cooked. If you need to keep them warm, you can place them in a low oven (about 200 degrees Fahrenheit) until you are ready to serve.

Conclusion:

Lamb chops with pineapple salsa is a delicious and easy-to-make dish that is perfect for a special occasion. The lamb chops are tender and flavorful, and the pineapple salsa adds a sweet and tangy flavor that perfectly complements the lamb. This dish is sure to impress your guests, and it is also a great way to enjoy lamb chops.
