Time 1h40m

Yield 4

Number Of Ingredients 12

1 pound lamb shoulder chops
2 medium potatoes (peeled and quartered)
3 small carrots (peeled and cut into 2-inch pieces)
1 medium onion (quartered)
2 ribs celery (trimmed and cut into 1/2-inch pieces)
1 small green bell pepper (cored and cut into 1/2-inch strips)
Optional: 1/2 cup diced rutabaga
1 1/4 teaspoons salt
Dash pepper
1 1/2 tablespoons flour (all purpose)
3 tablespoons water (cold)
2 tablespoons parsley (chopped)

Steps:

  • Gather the ingredients.
  • Trim the fat from the lamb chops, then cut the meat into 1-inch pieces. Place the meat and bones in a stockpot or Dutch oven; barely cover the meat with about 1 1/4 cups water. Cover the pan and simmer for 45 minutes (do not boil).
  • Add the potato, carrots, onion, celery, green pepper, and optional rutabaga with salt and pepper to the meat in the Dutch oven.
  • Cover and simmer for 20 to 30 minutes, until meat and vegetables are tender.
  • Using tongs, remove the bones to a bowl and discard.
  • Remove the Dutch oven from the heat.
  • Mix the flour and cold water. Stir the mixture into the stew. Return to heat. Cook, stirring until the stew is thickened.
  • Add the chopped parsley and taste and adjust the seasonings.
  • Serve the stew hot. You'll want some biscuits, rolls, or bread to sop up the stew. It's also nice to start with a green salad. Good wines to pair with lamb stew are those that are simple red blends that aren't too tannic. Or, you can pair it with a British pale ale. Refrigerate any leftovers and use within three to four days. The stew reheats well in the microwave for lunch or dinner. If you don't think you can finish the leftovers in that time, freeze the stew in an airtight container. Frozen stew will maintain the best quality for four to six months.

CHEF JOHN'S IRISH STEW

Chef John's Irish Stew image

Pay attention to the cut of lamb used in this recipe. I used lamb shoulder chops, which are a fantastic value, when you consider flavor, useable meat, and price. They will probably be the cheapest lamb at the store, have more flavor and richness than leg meat, and are cheaper than shanks and loins. It takes a while for the meat to braise and fall off the bone, but it's a wait rewarded with tender, succulent chucks of lamb.

Time 2h45m

Yield 6

Number Of Ingredients 13

3 pounds lamb shoulder chops
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 onion, chopped
1 tablespoon butter
2 tablespoons all-purpose flour
3 cups chicken stock
½ teaspoon dried rosemary
2 carrots, chopped
2 stalks celery, chopped
water as needed
1 ½ pounds baby Dutch yellow potatoes
¼ cup chopped green onions

Steps:

  • Season lamb shoulder chops with salt and black pepper.
  • Heat oil in a large heavy skillet over high heat. Working in batches, cook lamb shoulder chops until browned on both sides, 3 to 5 minutes per side. Transfer chops to a stock pot.
  • Cook and stir onion with a pinch of salt in the same skillet over medium heat until slightly softened and edges are browning, about 5 minutes. Stir butter into onion until melted; add flour and stir until onions are coated, about 1 minute.
  • Pour stock into onion mixture; bring to a boil, add rosemary, and stir until mixture thickens, 5 to 10 minutes.
  • Stir carrots and celery into pot with lamb shoulder chops and pour chicken stock mixture over the top. Add water as needed to cover meat completely. Bring mixture to a simmer, reduce heat to low, cover the pot with a lid, and cook until meat is almost falling off the bone, about 1 1/2 hours.
  • Transfer meat to a plate. Stir potatoes into stew and return meat to stew, placing on top of vegetables. Simmer, covered, until potatoes are tender and meat is falling off the bone, about 30 minutes.
  • Transfer meat to a plate using a slotted spoon. Bring stew to a boil and cook, skimming off fat, until stew is reduced and thick, 10 to 12 minutes.
  • Remove meat from bones; discard bones and any pieces of fat. Stir meat back into stew. Stir green onions into stew and season with salt and pepper to taste.

Tips:

  • Choose the right cut of lamb: For stewing, use a cut with a good amount of marbling, such as shoulder or neck. These cuts will become tender and flavorful as they cook.
  • Brown the lamb before stewing: Browning the lamb in a hot pan before adding it to the stew will help develop its flavor and create a rich, flavorful sauce.
  • Use a variety of vegetables: To add flavor and texture to your stew, use a variety of vegetables, such as carrots, celery, onions, potatoes, and tomatoes.
  • Use a flavorful broth: The broth you use for your stew is important, as it will contribute to the overall flavor of the dish. Use a stock that is flavorful and has a rich body, such as beef broth or lamb broth.
  • Season the stew well: Season the stew with a variety of herbs and spices, such as thyme, rosemary, garlic, and black pepper. This will help to enhance the flavor of the lamb and vegetables.
  • Cook the stew low and slow: Stewing is a low-and-slow cooking method that allows the flavors to develop and the meat to become tender. Simmer the stew for at least 1 hour, or until the lamb is fall-apart tender.
  • Serve the stew with a side of bread or rice: The stew can be served with a side of bread or rice to soak up the flavorful sauce.
