The basis of this recipe came from my 4th grade teacher's mother who was Armenian, and I've been making it for over 50 years. It is easy to put together, but the longer the stovetop step simmers, the better the casserole will be when served. Leftovers are yummy! You could serve this over rice, if you like, with a green salad. I just serve it in pasta bowls with crusty bread, butter, and a nice glass of red wine. Enjoy!

1 (1 pound) eggplant, cut into 1-inch cubes
salt
1 tablespoon olive oil
1 large sweet onion, coarsely chopped
2 large stalks celery, sliced
½ teaspoon ground cumin
2 pinches dried oregano
2 pinches ground dried rosemary
2 pinches paprika
⅛ teaspoon dried mint
1 pinch salt and ground black pepper to taste
1 ½ teaspoons garlic, minced
3 tomatoes, coarsely chopped
1 cup chicken broth
1 (15 ounce) can tomato sauce
1 pound ground lamb
1 tablespoon olive oil
1 lemon, juiced, or to taste

Steps:

  • Place eggplant in a colander set in a bowl or the sink; sprinkle with 1 teaspoon salt and toss to coat. Let eggplant stand for at least 1 hour. Rinse off the bitter liquid and excess salt and drain well.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Stir in onion and celery; cook and stir until onion has softened and turned translucent and celery is fragrant, about 5 minutes.
  • While vegetables are cooking, combine ground cumin, oregano, rosemary, paprika, mint, salt, and black pepper in a small bowl or mortar and pestle and mix well; this is the lamb seasoning (see Cook's Note). Set seasoning aside.
  • Stir eggplant cubes and garlic into the vegetables in the skillet, mixing well, and cook for an additional 5 minutes. Add chopped tomatoes and sprinkle with half of the lamb seasoning mixture. Reserve remaining seasoning. Stir gently and cook for 5 minutes more.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart casserole dish.
  • Pour chicken broth and half the can of tomato sauce into the skillet and simmer for 10 minutes; add a little water if the sauce starts to get dry. Transfer the sauce to the prepared casserole dish.
  • Return the skillet to the stove over medium-high heat and heat the reserved tablespoon of olive oil over medium heat. Place ground lamb into skillet and sprinkle with remaining seasoning mixture. Brown lamb in the hot oil, stirring frequently, until the meat is evenly browned; it should look like imperfect meatballs.
  • Gently transfer the lamb to the casserole dish, pushing it down into the vegetable mixture so that it is at least partially submerged. Stir fresh lemon juice into the remaining tomato sauce and pour the sauce over the casserole.
  • Bake uncovered for 45 minutes to 1 hour, depending upon how tender you like your vegetables.

2 to 3 medium eggplants (about 3 pounds total), peeled and sliced into 1/2-inch rounds

1/2 cup olive oil, or as needed
Meat sauce:
2 tablespoons olive oil
1 large onion, peeled and diced
1 1/4 pounds ground lamb (or beef, turkey, pork, or a combination)
2 cloves garlic, peeled and minced
1 28-ounce can diced tomatoes
2 tablespoons tomato paste
1/4 teaspoon ground cloves
1 pinch ground allspice
1-inch cinnamon stick
1 bay leaf
Kosher salt and freshly ground black pepper
1/4 cup dry red wine
Cheese sauce:
5 tablespoons unsalted butter
5 tablespoons all-purpose flour

Steps:

  • To prepare the eggplant:
  • 1. Place the eggplant in a colander, toss liberally with salt, and let sit for about 1 hour to drain away extra water. Squeeze out the excess water and pat dry with a kitchen towel.
  • 2. In a large skillet over medium-high heat, add the olive oil. Working in batches, fry the eggplant slices, turning as necessary, until tender and light brown, 4 to 5 minutes total. Transfer the cooked slices to a rack set over a baking sheet to drain while you sauté the remaining eggplant. Set aside.
  • To prepare the meat sauce:
  • 1. In a large skillet over medium heat, add the olive oil. Add the onion to the pan and cook, stirring occasionally, until very tender, about 10 minutes. Add the ground meat and cook, stirring occasionally, until just browned, about 5 minutes.
  • 2. Add the garlic, tomatoes, tomato paste, cloves, allspice, cinnamon, bay leaf, and 1/2 cup water and bring the liquids to a boil. Reduce the heat to medium-low, season with salt and pepper, and simmer, stirring occasionally, until most of the liquid has reduced and the sauce is very thick, about 30 minutes.
  • 3. Add the red wine and continue simmering until the wine has reduced and developed a sweet aroma, 2 to 3 minutes. Remove and discard the bay leaf and cinnamon stick. Set the sauce aside.
  • To prepare the cheese sauce:
  • 1. In a medium saucepan over medium heat, melt the butter. Stir in the flour and whisk until it is dissolved and the mixture resembles a smooth paste, about 2 minutes.
  • 2. Gradually whisk in the milk about 1 cup at a time, working out any lumps that form. Bring the sauce to a full boil, then reduce the heat to low and gently simmer, stirring frequently, until thickened, about 30 minutes. Remove the sauce from the heat. Season with nutmeg, salt, and pepper to taste.
  • 3. In a medium bowl lightly beat the egg yolks. Whisk about 1 cup of the hot milk mixture into the yolks to bring them up to the same temperature. Slowly add the yolk mixture to the rest of the milk mixture, then add the cheese and blend well. Set aside and keep warm.
  • To assemble the moussaka:
  • 1. Preheat the oven to 350°F.
  • 2. Scatter the breadcrumbs in a deep, rectangular baking dish. Arrange about half of the eggplant slices in an even layer over the breadcrumbs. Add all of the meat sauce over the eggplant and spread into an even layer. Arrange the remaining eggplant in an even layer over the meat sauce. Pour the cheese sauce over the eggplant.
  • 3. Bake the moussaka until the cheese sauce is thick and golden brown and the eggplant is very tender, about 45 minutes. Let the moussaka rest for 25 minutes before serving.

Combine with 1 1/2 cups diced cold lamb, 1 cup leftover lamb gravy or canned beef gravy, 1 clove garlic, finely chopped, 2 cups cooked rice and 1/4 cup chopped parsley. 1 medium onion, halved and thinly sliced
1/2 cup/15 grams fresh oregano leaves, roughly chopped
1/3 cup/80 milliliters olive oil
1/4 cup/65 grams tomato paste
6 garlic cloves, thinly sliced
1 tablespoon ground cinnamon
2 teaspoons ground allspice

  • Remove from the oven and continue to break apart the meat very well (don't worry if you break apart some of the eggplant, too). Add the canned tomatoes with their juices, lightly crushing the tomatoes by hand. Stir in the chicken stock and parsley then return to the oven and bake for another 35 minutes, stirring twice throughout, until the sauce is thick and rich and the eggplant is very soft. Remove from the oven and turn the oven temperature up to 475 degrees Fahrenheit/250 degrees Celsius.
  • While the casserole is in the oven, prepare the topping: Whisk together the yogurt, yolks, flour, garlic and half the Parmesan with 1/4 teaspoon salt and a good grind of pepper. Once ready, spoon the yogurt mixture over the lamb and eggplant, gently spreading to cover. Top evenly with the remaining Parmesan, feta, pine nuts, parsley and red-pepper flakes.
  • Bake until golden and bubbling, 15 to 20 minutes. Let cool for about 15 minutes before serving.

1 kg lamb (diced)
1/4 cup plain flour
1 tablespoon olive oil
2 cloves garlic (crushed)
3/4 cup dry white wine
2 beef bouillon cubes, dissolved in
3/4 cup hot water
2 (440 g) cans diced tomatoes
1 (45 g) can anchovy fillets (diced well)
1 medium carrot (diced)
1 medium onion (diced)
1/2 teaspoon dried chili pepper flakes or 2 fresh chili peppers
1 sprig fresh basil
6 olives (diced well)
1 tablespoon balsamic vinegar
salt and pepper, to taste

Steps:

  • Toss diced lamb in plain flour with salt& pepper.
  • Heat oil in large frypan and cook lamb until brown.
  • Remove from pan and set aside.
  • Add garlic, onion, carrots, wine and bring to boil.
  • Add beef stock, tomatoes, anchovies, chilli and basil, stir to combine.
  • Return lamb to dish and bring to boil.
  • Cover frypan and reduce heat to med-low (if it starts to stick to the bottom of the pan the temp is too high) and cook for 2 to 2 1/2 hours, stirring occasionaly.
  • When cooked add diced olives and balsamic vinegar and simmer for 5 minutes.
  • Serve with a side of your choice.
  • My husband likes this served with mashed potato and green beans.

6 shoulder lamb chops (with bone in, 6 to 8 ounces each)
3 lemons
Freshly ground black pepper
2 tablespoons cooking oil
1 cup finely chopped onion
2 carrots, finely chopped
1 stalk celery, finely chopped
1 teaspoon salt
1 teaspoon minced garlic
1/2 teaspoon crushed fennel seeds
1/2 teaspoon rosemary
2 cups well-seasoned chicken stock
2 cups dry white wine
1 cup medium barley
1 bay leaf
1 teaspoon minced parsley

Steps:

  • Cut chops into uniform pieces about one-and-a-half inches square (trim as much fat as possible). Toss lamb with juice of one-and-a-half of the lemons and a generous grinding of black pepper. Set aside to marinate for two to three hours. Reserve the rest of the lemons to cut into wedges as a garnish for the finished dish.
  • Heat oil in a three-quart casserole. Dry lamb pieces and sear over high heat until lightly browned. You will probably have to do this in two or three shifts. When all the lamb is browned, set it aside and pour the fat out of the casserole, leaving only a thin film on the bottom.
  • Lower heat to medium-low and add onion, carrots and celery. Cook for about eight minutes, until the vegetables are tender but not browned. Add salt, garlic, fennel seeds and rosemary and cook a minute or two, until the garlic is soft but not brown. Return lamb to the casserole.
  • Add the stock and wine and bring to a boil, stirring to free any particles of meat or vegetables clinging to the bottom or sides of the casserole. Lower heat to a simmer and stir in the barley. Make sure all the barley is submerged in liquid. Add the bay leaf.
  • Cover the casserole and cook over very low heat for one hour. The meat should be tender and the barley cooked. Almost all the liquid in the casserole should be absorbed by the barley. If the ingredients are too moist, uncover the casserole and continue cooking over low heat for another five minutes or so.
  • Check seasonings. Transfer meat and barley to a serving platter, surround with lemon wedges and dust with parsley.

Serve with crusty bread and Tzatziki -- either store bought (Costco's is good!), or make your own: Peel, seed and shred a large cucumber, squeeze dry and mix with 1-2 minced garlic, dash of salt and pepper, 2 T chopped mint and 1/4 cup ( i use a bit more) plain yogurt.

2 onions, chopped

  • While eggplant in roasting, heat a large dutch oven over med-high heat. Add ground lamb and cook, breaking up meat with a wooden spoon, until browned, 3-5 minutes. Transfer to colander to drain off fat. Set aside.
  • Add oil to the dutch oven and heat over med heat. Add onions and cook until golden, about 5 minutes. Add red peppers and garlic and cook for 2 minutes more. Stir in tomatoes and their juice, oregano, thyme, cinnamon and cloves. Simmer, breaking up the tomatoes a bit with the spoon, until mixture has thickened slightly, 3-5 minutes.
  • Scoop out eggplant flesh and chop coarsely. Stir rice, beef broth, chopped eggplant and lamb into tomato mixture. Bring to a simmer, then cover the pan and place in oven. Bake 30-35 minutes, or until rice is tender and liquid has been absorbed. Season with salt and pepper. Dot with feta cheese and serve.

Steps:

  • Trim fat from lamb shanks.
  • In a heavy pot, brown well in butter.

5 large egg yolks
For pasta:
2 pounds ziti
1 3/4 cups coarse fresh bread crumbs (from 4 slices firm white sandwich bread)
1/4 cup grated Parmigiano-Reggiano or kefalotyri cheese

Steps:

  • Make meat sauce:
  • Cook onions in oil in a 12-inch heavy skillet over medium heat, stirring frequently, until softened, about 7 minutes. Add garlic and cook, stirring, 1 minute. Increase heat to high, then stir in lamb and cook, stirring occasionally and breaking up any lumps with a fork, until meat starts to brown, about 15 minutes.
  • Meanwhile, drain both cans of tomatoes, reserving juice, and chop.
  • Pour off excess fat from skillet, then stir in tomatoes with their juice, thyme, spices, and 1 1/2 teaspoons salt. Simmer over low heat, partially covered, until some liquid has evaporated but sauce is still moist, about 40 minutes. Discard thyme.
  • Make béchamel while meat sauce simmers:
  • Melt butter in a heavy medium pot over medium heat. Whisk in flour, then cook roux, whisking frequently, until pale golden, about 6 minutes.
  • Meanwhile, heat milk in a heavy medium saucepan until just about to boil. Add milk to roux in a stream, whisking constantly until very smooth. Bring sauce to a boil over medium heat, whisking, then cook, whisking, 1 minute. Remove from heat and stir in nutmeg, cheese, and 1 tablespoon salt.
  • Lightly beat yolks in a bowl. Gradually whisk in 2 cups béchamel, then whisk yolk mixture into remaining béchamel in saucepan. Cover with a round of buttered wax paper (buttered side down).
  • Cook pasta and assemble pastitsio:
  • Preheat oven to 375°F with rack in middle. Cook ziti in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until al dente.
  • Drain pasta, then transfer to a large bowl and stir in 1 cup béchamel.
  • Arrange one third of pasta lengthwise in 1 layer in a large (17-by 11-inch) baking pan (about 2 inches deep).
  • Add half of meat sauce (about 3 cups) to baking pan, spreading evenly over pasta.
  • Make another layer of pasta and top with remaining meat sauce, then arrange remaining pasta on top.
  • Spread remaining béchamel (about 6 cups) evenly over top layer of pasta.
  • Stir together bread crumbs and cheese and sprinkle evenly over top of pastitsio.
  • Bake until crumbs are golden brown and sauce is bubbling, about 45 minutes.

½ cup sliced celery
½ cup low-sodium vegetable stock
¼ cup plum jam
2 tablespoons tomato sauce
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large pot over medium heat until melted. Add onion; cook and stir until softened, about 5 minutes.
  • Season flour with salt and pepper in a shallow dish. Dredge lamb chops in flour mixture on both sides.
  • Layer lamb chops with onion, carrot, and celery in a casserole dish.
  • Mix stock, plum jam, tomato sauce, and Worcestershire sauce together in a small bowl. Pour over lamb in the casserole dish.

2 tablespoons all-purpose flour
1 tablespoon vegetable oil
1 stalk celery, diced
1 medium onion
1 (14 1/2 ounce) can no-salt-added stewed tomatoes
1 (14 ounce) can beef broth
1 garlic clove, minced
1 bay leaf
1/4 teaspoon salt
1 dash black pepper
1 (16 ounce) can white beans or 1 (16 ounce) can cannellini beans
1 teaspoon chopped fresh parsley
1 lemon, rind of, grated

Steps:

  • Preheat oven 350 degree F.
  • Coat lamb shanks with flour.
  • Add lamb shanks to a big casserole pan coated with vegetable oil.
  • Cook lamb shanks on all sides.
  • Transfer shanks to bowl.
  • In drippings from casserole pan, cook celery and onion over medium heat until well browned.
  • Return shanks to casserole pan and add stewed tomatoes, beef beef broth, garlic, bay leaf, thyme, salt and pepper.
  • Heat to boiling over high heat.
  • Cover casserole pan and bake for 1 hour and 30 minutes or until lamb shanks are tender, turning meat once.
  • When lamb shanks are done, skim fat from liquid. Stir in white beans; heat through.
  • Sprinkle with parsley and lemon peel and serve.

4 onions, peeled and thinly sliced
2 teaspoons dried parsley
6 carrots, sliced
½ teaspoon pepper
½ teaspoon salt
6 small potatoes, peeled and sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim excess fat from the lamb chops and place them into a greased 2 quart casserole dish. Cover the lamb with a layer of sliced onion, then sprinkle with 1/3 of the parsley, salt and pepper. Cover the onions with the sliced carrots, then sprinkle with another 1/3 of the parsley, salt and pepper. Cover the carrot layer with a layer of potatoes, and sprinkle with remaining parsley, salt and pepper. Add enough cold water to fill the dish halfway.
  • Bake, covered, for 30 minutes in the preheated oven, then remove the cover and continue to bake for an additional 30 minutes.

Who could beat a hearty casserole in winter either? You can use whatever veges that you have at hand. Use a gluten-free flour and stock if making this recipe gluten-free. Serve with toast, pasta or rice. I remember my mother making this casserole when I was a child. To make a richer gravy substitute 1 cup of red wine for 1 cup of stock. This is a great rustic dish- no need to be to accurate with your measurements or weights

2 large potatoes, peeled and diced
3 large celery ribs, chopped
2 large carrots, sliced o.r diced
2 onions, sliced o.r diced
200 g green beans, ends removed and roughly chopped into smaller lengths (approx.7oz)
3 garlic cloves, crushed
2 teaspoons dried basil or 2 teaspoons dried herbs
1 teaspoon smoked paprika
1 dash salt
1 dash pepper
2 cups beef stock (can substitute in up to 1 cup of red wine) or 2 cups water (can substitute in up to 1 cup of red wine)
400 g crushed tomatoes (14 ounces) or 400 g diced tomatoes (14 ounces)
1 1/4 kg diced casserole beef (roughly 2 1/2 pounds) or 1 1/4 kg diced lamb (roughly 2 1/2 pounds)
5 tablespoons plain all-purpose flour or 5 tablespoons gluten-free flour

Steps:

  • Place the diced meat and flour in a plastic bag. Toss the meat to coat thoroughly in the flour. Add in extra flour if required. set aside.
  • Prepare vegetables and place in the bottom of the crock pot.
  • Add herbs,garlic, salt and pepper to the veges.
  • Add the meat to the crock pot.
  • Add the can of tomatoes. If using peeled tomatoes-roughly chop them first. Add the stock/wine/water.
  • Cook on high setting for approx 4 hours or low setting for about 8 hours. Serve with toast, noodles or rice.
  • NOTE- if you like a lot of gravy add more beef stock to the crock. Before serving if the gravy is not thick enough add some cornflour(maize corn flour) or arrowroot mixed with a small amount of water to the casserole and cook until thickened.

1/4 cup whole wheat bread crumbs
Olive oil cooking spray

  • Preheat oven to 350 F. 1. Soften onion and garlic over medium heat. 2. Add lamb, brown on high heat. 3. Add oregano, thyme, red pepper and salt & pepper to taste and sautee for 1 minute. 4. Add white wine until liquid evaporates. 5. Take off heat and mix in nutmeg, lemon zest and juice, spinach, pasta and feta. Adjust seasonings. 6. Fold into buttered round casserole dish. top with bread crumbs and then parmesan and spray with olive oil. Bake for 30 minutes uncovered.

600 g minced lamb
1 onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1 clove garlic, crushed
1 (415 g) can tomatoes, undrained,chopped
1/2 cup tomato sauce
1/2 cup water
1 chicken stock cube
dried herbs
1 1/2 cups macaroni
1 dash olive oil
1 1/2 cups grated tasty cheese (approximately)
1 tablespoon margarine
1 tablespoon plain flour
1 cup milk
1/2-1 cup grated tasty cheese

Steps:

  • Cook Macaroni in the usual way until not quite tender.
  • Drain and toss in a dash of olive oil.
  • Leave aside.
  • Saute the vegetables and garlic for three minutes.
  • Add mince and brown.
  • Add tomatoes and tomato sauce along with the water and crumbled stock cube and dried herbs.
  • Simmer for 30 minutes or until liquid is reduced.
  • Place half of the macaroni into the bottom of a deep casserole dish.
  • Sprinkle over some grated cheese.
  • Now layer half the meat/veg mix over macaroni, followed by remaining noodles, more cheese, then remaining meat/veg mix.
  • Spoon the cheese sauce over the top and sprinkle with more cheese.
  • Bake 220 deg celsius 20- 25 minutes.
  • To make cheese sauce: Melt the margarine.
  • Stir in flour.
  • Blend in milk.
  • Cook for three minutes stirring often.
  • Stir in grated cheese til melted.

12 french-trimmed lamb shanks
6 slices bacon, chopped
2 medium onions, sliced

1 (400 g) can diced tomatoes or 1 (400 g) can crushed tomatoes
1/4 cup tomato paste

1 1/4 liters vegetable stock (5 cups)
1 (400 g) can brown lentils, rinsed,drained
mashed potatoes, to serve
extra fresh rosemary, to garnish (optional)

Steps:

  • Heat oil in a large pan.
  • Add shanks, in batches, cook until browned all over.
  • Remove from pan.
  • Add bacon, onions and garlic to same pan, cook, stirring, until onions are soft and lightly browned.
  • Return shanks to pan with whole carrots, swedes, potatoes, undrained crushed tomatoes, tomato paste, wine, rosemary and stock.
  • Bring to boil, simmer, covered, for about 1 1/4 hours, or until lamb is tender.
  • Stir in lentils.
  • Simmer, uncovered, for about 20 minutes, or until sauce is thickened.
  • Serve casserole over mashed potatoes; garnish with extra fresh rosemary.
