LAMB AND VEGETABLE CASSEROLE

Lamb and Vegetable Casserole image

This in response to a request, I have not tried it but it sounds wonderful, if you try it please let me know how it is. (From "The Wine and Food of Europe - Marc & Kim Millon). Called Ghivetch. Finally got around to trying this yesterday, served to company and everyone loved it! wish I had tried it sooner, served with a tomato salad and chunks of French bread to sop up the delicious juices. The topping is quite different (for us anyway) kinda like a frittata--very good.)

Tips:

  • For a succulent casserole: Choose high-quality lamb, preferably from the shoulder or leg. These cuts are well-marbled and will remain moist during cooking.
  • Enhance the flavor: Use a flavorful vegetable stock or broth, or even red wine, to add depth of flavor to the casserole. You can also add aromatic herbs like thyme or rosemary for an extra layer of taste.
  • Don't overcrowd the pan: Ensure there is enough space between the lamb and vegetable pieces to allow for even cooking and to prevent steaming.
  • Brown the lamb: Before adding the vegetables, brown the lamb pieces in a pan. This will create a delicious caramelized crust and lock in the flavors.
  • Cook low and slow: Allow the casserole to cook slowly over low heat, covered, for at least 1 hour or until the lamb is fall-apart tender and the vegetables are cooked through.
  • Serve with sides: Accompany the lamb and vegetable casserole with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh green salad.
