Tomato and Garlic Crust:
2 6- to 7-ounce jars oil-packed sun-dried tomatoes with herbs, drained well, oil reserved
8 large garlic cloves, peeled
2 large shallots, peeled, halved
1 tablespoon dried oregano
Lamb:
3 tablespoons olive oil
4 garlic cloves, peeled
3 large fresh rosemary sprigs
2 2-pound racks of lamb (8 chops each), trimmed, frenched

Steps:

  • Tomato and garlic crust:
  • Preheat oven to 350°F. Place 1/4 cup reserved tomato oil, garlic, and shallots in small baking dish; sprinkle with salt and pepper and cover with foil. Bake until garlic is tender, about 45 minutes.
  • Transfer garlic mixture to processor. Add tomatoes and oregano. Blend until paste forms. Season with salt and pepper. DO AHEAD: Can be made 2 days ahead. Transfer to bowl, cover, and chill.
  • Lamb:
  • Heat oil in heavy large skillet over medium-high heat. Add garlic and rosemary to skillet. Saute until garlic browns, about 5 minutes. Discard garlic and rosemary. Sprinkle lamb on all sides with salt and pepper. Add 1 rack to skillet, rounded side down. Sear until golden brown, about 5 minutes. Transfer rack to large rimmed baking sheet, rounded side up. Repeat with remaining lamb rack.
  • Preheat oven to 450°F. Roast lamb 18 minutes. Remove from oven. Spread 1/3 cup tomato-garlic paste thinly all over top of each. Return to oven and roast until thermometer inserted into center registers 134°F, about 3 minutes longer. Let lamb rest 10 minutes. Cut between bones into individual chops and serve.

1/4 cup olive oil
2 pounds lamb stew meat
2 white onions, medium diced
2 (14 1/2-ounce) cans crushed tomatoes
1/4 cup dried currants
1/4 cup dried cherries
1/4 cup golden raisin
1/2 cup dried apricots, julienne
Salt and pepper
1 cinnamon stick
Blended spices, recipe follows
1/4 cup unflavored yogurt
2 tablespoons chopped mint leaves
1 tablespoon lemon juice
Salt and pepper

Steps:

  • In a large heavy bottomed pot, over medium-high heat, add 1/2 the olive oil and heat. When the oil is hot, brown the lamb. Add the onions and saute until soft. Add the tomatoes and all of the dried fruit. Season generously, to taste, with salt, pepper, cinnamon stick and spice blend. Simmer on a medium heat for about 1 to 1 1/2 hours, or until very tender.;
  • Combine all ingredients in a mixing bowl. Season with salt and pepper. Garnish the lamb with a tablespoon of yogurt.;
  • 1 tablespoon cumin seed
  • 2 tablespoons cardamom seed
  • 2 tablespoons coriander

Twelve 17- by 12-inch phyllo sheets
For filling
1 1/2 cups boiling water
1/2 cup dried tomatoes not packed in oil (about 2 ounces)
1/2 pound mushrooms
3/4 cup Kalamata or other brine-cured black olives or pitted ripe black olives
1 tablespoon olive oil
1 pound ground lamb
1 teaspoon dried rosemary, crumbled
1 teaspoon dried basil, crumbled
1/2 teaspoon dried hot red pepper flakes
1 1/2 cups crumbled feta (about 8 ounces)
1/2 cup grated mozzarella (about 3 ounces)
About 5 tablespoons olive oil

Steps:

  • Cover stack of phyllo with 2 overlapping sheets plastic wrap and then a damp kitchen towel.
  • Make filling:
  • In a small bowl pour boiling water over tomatoes and soak 5 minutes. Thinly slice mushrooms. If using brine-cured olives, pit them. Thinly slice olives. Drain tomatoes well and thinly slice.
  • In a large heavy skillet heat oil over moderately high heat until hot but not smoking and sauté mushrooms with salt and pepper to taste, stirring, until liquid they give off has evaporated. With a slotted spoon transfer mushrooms to a large bowl. Add lamb to skillet and cook, stirring and breaking up any lumps, until no longer pink. Transfer lamb with slotted spoon to bowl with mushrooms and discard fat. Stir tomatoes, olives, rosemary, basil, and red pepper flakes into lamb mixture and cool 10 minutes. Stir in feta, mozzarella, and salt and pepper to taste.
  • Preheat oven to 425°F and lightly grease a large shallow baking pan.
  • Stack phyllo between 2 sheets of wax paper and cover with a dry kitchen towel. On a work surface arrange two 20-inch-long sheets of wax paper with long sides overlapping slightly and facing you. Put 1 sheet of phyllo on wax paper and lightly brush with oil. On this, layer and brush 5 more sheets of phyllo in same manner. (Oiled phyllo stack should be 6 sheets thick.)
  • Spread half of filling in a 3-inch-wide strip, mounding it, on phyllo 4 inches above the near long side, leaving a 2-inch border at each end. Using wax paper as a guide, lift bottom 4 inches of pastry over filling, folding in ends, and tightly roll up strudel. Carefully transfer strudel, seam side down, to baking pan and lightly brush with oil. Make another strudel with remaining ingredients in same manner.
  • Bake strudels in middle of oven 25 minutes, or until golden. Cool strudels to warm in pan on a rack.
  • Cut strudels into 1-inch slices with a serrated knife and serve slices warm.

2 tablespoons honey
2 tablespoons red wine vinegar
2 garlic cloves, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
8 lamb chops, rib, bones frenched
1 1/2 lbs cherry tomatoes, preferably on the vine
1 1/2 tablespoons balsamic vinegar

Steps:

  • Stir together honey, vinegar, garlic, salt, and pepper and transfer to a sealable plastic bag.
  • Add lamb, then seal bag, pressing out excess air and turning to distribute marinade.
  • Marinate lamb, chilled, turning occasionally, 1 hour.
  • Bring lamb to room temperature.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill and on lid.
  • Remove lamb from marinade, reserving marinade.
  • When fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds), grill lamb on lightly oiled grill rack, turning once, about 4 minutes total for medium-rare.
  • Transfer to a platter and keep warm, covered.
  • Cook tomatoes (still on vine, if using) in disposable roasting pan, covered with grill lid, carefully turning, until softened and just beginning to split, about 8 minutes.
  • Drizzle balsamic vinegar over tomatoes, turning to coat, then cook, uncovered, until vinegar is reduced by about half, about 2 minutes.
  • Remove from grill.
  • Bring reserved marinade with any lamb juices accumulated on platter to a boil in a small heavy saucepan, covered.
  • Drizzle lamb with marinade and serve with tomatoes.
  • Cooks' note:
  • Lamb and tomatoes can also be grilled in batches in a lightly oiled well-seasoned ridged grill pan over moderately high heat (tomatoes will take less time to soften, about 3 minutes).

Sun-Dried Tomato and Herb Stuffed Leg of Lamb image

This was an experiment I did for Easter this year and it turned out very well. I bought the lamb already off the bone and cut it myself before stuffing. But you can ask your butcher to do this for you,he will even cut it ready for stuffing and rolling to make it easier. I made 2 stuffed pork loins as well to serve 10 of us, my lamb was 1.1kg in weight I think it would serve 4-6 people if not making with other meats, along with sides. Just so you know the way I cut my lamb I will explain this here. Mine was already looking like a mini log, I turned it over so it was skin side down on my chopping board. I cut the lamb down the center, leaving about a half inch of meat uncut. I then cut through each half, cutting through the center of each, again not going all the way through. Then I opened it out and pounded it with a meat mallet to even out thickness before spreading stuffing over and rolling back up before securing with kitchen string.

1 1/8 kg leg of lamb, de-boned and sliced open ready to stuff
0.5 (130 g) packet sage and onion seasoned stuffing mix, made up
1 shallot, chopped finely
5 garlic cloves, 3 crushed, 2 sliced thinly
1 tablespoon rosemary, chopped finely
8 sun-dried tomatoes, chopped finely
sage, Rosemary, Thyme, garlic powder and paprika (For sprinkling over top of lamb)

Steps:

  • Pre-heat oven to 180 degrees Celsius.
  • Open out lamb leg, I pounded with a meat mallet to even out thickness. (Read note above about cutting leg for stuffing.).
  • Heat a little oil in a pan, add crushed garlic, and shallot and cook until shallot has softened.
  • In a bowl combine stuffing mix, garlic/shallot mix, rosemary and tomatoes, spread stuffing evenly over lamb, carefully roll lamb up to form a log roll, secure with kitchen string.
  • Slice slits into top of lamb at intervals, push sliced garlic into slits, sprinkle top with listed herbs.
  • Place in an ovenproof dish and roast for about 1hr 30-45 Min's or until cooked as desired.
  • Let meat stand before slicing.
