LADY BIRD JOHNSON'S BARBEQUE SAUCE

Lady Bird Johnson's Barbeque Sauce image

Butter is a traditional ingredient in old Southern-style barbecue sauces and it's responsible for a lot of flavor here. This is a thin, tasty sauce that both goves over the meat while it's being grilled and gets passed at the table, warm.

This recipe is from the LBJ library archives. A rich squash casserole with shrimp and Parmesan cheese. The original recipe calls for margarine, but I use butter. If you want to make the "original" recipe, feel free to sub in margarine for the butter.

Tips:

  • Fresh is best: Use fresh spinach for the best flavor and texture. If you only have frozen spinach, thaw it completely and squeeze out any excess water before using.
  • Don't overcook the spinach: Wilting the spinach briefly is all that's needed. Overcooking will make it mushy.
  • Use a good quality cheese: The cheese is one of the main ingredients in this casserole, so it's important to use a good quality one. A sharp cheddar or Parmesan would be a good choice.
  • Don't skimp on the butter: The butter adds richness and flavor to the casserole. Don't be afraid to use a full stick.
  • Season to taste: Be sure to taste the casserole before serving and adjust the seasonings as needed.

Conclusion:

Lady Bird Johnson's Spinach Casserole is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to use up leftover spinach, and it's also a good source of vitamins and minerals. So next time you're looking for a tasty and healthy side dish, give this casserole a try.
