48 kumquats, halved and seeded
2 cups fresh orange juice (from 4 to 5 oranges)
1/2 cup sugar
2 cups fresh mint leaves
3 cups light rum
6 cups ice cubes

Steps:

  • In a large pitcher, stir together kumquats, orange juice, and sugar. Let stand 10 minutes. Add fresh mint leaves. Muddle mixture with a wooden spoon, crushing kumquats and mint. Stir in rum. Add ice cubes, and serve immediately. (Or, add ice to 8 glasses, and pour mixture over.)

2 teaspoons sugar
6 mint leaves
1 large lime, juice of
3/4 cup light rum
1 -2 cup crushed ice
3/4 cup club soda
2 sticks sugar cane, 8 inches long (optional)

Steps:

  • Reserve 4 kumquat slices for garnish.
  • Place remaining fruit slices in a large cocktail shaker.
  • Add the sugar, 4 of the mint leaves and lime juice.
