SWEET POTATO (KUMARA) AND LENTIL PIE
Published in the New Zealand Woman's Weekly, 16 January 1991. A delicious vegetarian flan that appeals to meat eaters and vegetarians alike. This has become a firm family favourite and one the the few recipes that I regularly make.

KUMARA PIE
From the NZ restaurant Kai in the City (a restaurant based on traditional and contemporary Maori kai combined with the best of international cuisine). With purple kumara you may need to add about 1/2 cup of milk to soften the purée. However, if you use golden kumara, which are more moist, you may not need to add any milk.

Tips:
- Choose the right kumara: Look for firm, smooth kumara with no blemishes or bruises. Avoid any kumara that has cracks or is starting to shrivel.
- Cook the kumara properly: Kumara can be baked, roasted, or microwaved. Whichever method you choose, make sure the kumara is cooked until it is tender and can be easily pierced with a fork.
- Use a variety of spices and herbs: Kumara has a mild flavor, so it can be easily paired with a variety of spices and herbs. Some good options include cumin, coriander, paprika, thyme, and rosemary.
- Don't overmix the filling: When mixing the kumara filling, be careful not to overmix it. Overmixing can make the filling tough.
- Use a good quality pastry: The pastry is an important part of any pie, so make sure you use a good quality one. You can either make your own pastry or use a store-bought one.
- Bake the pie until the pastry is golden brown: The pie is done baking when the pastry is golden brown and the filling is bubbling.
