1 cup brown sugar, packed
1 cup soy sauce
1/2 cup water
1/4 cup mirin (rice wine)
1 small onion, peeled and finely grated
1 small Asian pear, peeled and finely grated
4 tablespoons minced garlic
2 tablespoons dark sesame oil
1/4 teaspoon black pepper
2 green onions, thinly sliced (optional)

Steps:

3 tablespoons packed brown sugar

1/2 apple pear (Asian pear), grated on the large holes of a box grater

2 pounds flanken-cut beef short ribs
Vegetable oil, for the grill

2 scallions, very thinly sliced on an angle

1/2 cup packed light brown sugar
2 tablespoons sesame oil
2 tablespoons rice vinegar

5 lbs beef short ribs or 5 lbs pork ribs
3 tablespoons cornstarch
1 1/2 cups shredded carrots
