STIR FRIED RICE NOODLES WITH KOHLRABI



Stir Fried Rice Noodles with Kohlrabi image

Kohlrabi is a turnip like vegetable that when cooked enhances it's sweetness and adds a light crisp. I love hoisin sauce and candied peanuts on noodle bowls

10 oz rice noodles
5 Tbsp soy sauce
1 Tbsp shaoxing wine, saki, or dry sherry
2 Tbsp brown sugar
1/4 tsp chili oil more or less to taste
3 Tbsp peanut oil divided
2 large eggs beaten
1 lb kohlrabi peeled halved and thinly sliced
4 clove garlic minced
1 small red bell pepper seeded and sliced
1 handful sugar snap peas trimmed and cut in half
1 c bean sprouts
2 scallions sliced on bias
1 c fresh basil chopped
MY GARNISHES
hoisin sauce
chopped candied peanuts

Steps:

  • 1. Cook the noodles according to package directions. Drain and set aside. Mix the soy sauce, wine, brown sugar and chili oil together and set aside.
  • 2. Add 1 tbsp peanut oil to a skillet. Add the beaten eggs and when set on the bottom fold the eggs over themselves then remove from the pan to a cutting board. Slice in thin slices. Set aside.
  • 3. In a large skillet or Wok add the remaining oil. Add the kohlrabi and saute until lightly browned. Add the garlic and cook 30 seconds. Add the red bell pepper and sugar snap peas. Cook until crisp tender.
  • 4. Add the soy sauce mixture, noodles, eggs, bean sprouts, and scallions. Cook and toss until the sauce coats all the ingredients and everything is warmed through. Stir in the basil
  • 5. Garnish with hoisin sauce and candied peanuts if desired.

believe it or not, this is the ONLY way how we eat kohlrabi in iraq ! my family really likes this recipe so every year in kohlrabi season i do the recipe at least once.the recipe calls for cubed lamb meat but you can use ground beef meat instead, although i prefer the 1st choice beause it is so much tastier with lamb meat(small cubes not ground), and since there are no fixed measurements in iraqi cooking i will give you approximate measures to this recipe

1 medium onion, finely chopped
2 tablespoons corn oil or 2 tablespoons olive oil
2 cups peeled cubed kohlrabi (small cubes)
1 cup cubed lamb (small cubes)
1 teaspoon curry powder
1/2 teaspoon gorund black pepper
1 1/2-2 cups cooked basmati rice
1/2-1 tablespoon ground dried limes (sour in taste, black in color)

Steps:

  • heat the oil in medium pot, fry the onion in the hot oil till tender, add meat cubes and cook on high heat until the meat changes its color, add the kohlrabi cubes and cook for additional 5 minutes.
  • add water to the pot until it is 1/2 inch over the mixture and let it boil till the meat and kohlrabi is tender, add spices and salt and the ground lime to your preference.
  • let the mixture on heat until all the liquids are almost gone(we need a little moisture to incorporate the mixture with the cooked rice).
  • remove the pot from fire and add the rice gradually to the meat and kohlrabi mixture and mix them together until they are well incorporated.
  • serve hot, enjoy.
