Orange, Strawberry and Kiwi Salad (Ww) image

A refreshing fruit salad that is especially good at breakfast. If you prep it the evening before, don't add the mint until morning or it just kind of bitter. Yes, I learned that the hard way. ;) 1 WW point per serving.

Categories     Salad     Vegetable

Yield 12 people

Number Of Ingredients 10

1-lb bag baby spinach
1 pint strawberries, sliced
2 kiwis, peeled and sliced
1/4 cup canola oil
1/3 cup sugar
1/4 cup raspberry vinegar
1/4 teaspoon Worcestershire sauce
2 green onions, chopped
2 tablespoons sesame seeds, toasted
1 tablespoon poppy seeds

Steps:

  • 1. Rinse, dry and place spinach in salad bowl 2. Add sliced strawberries and kiwis and toss 3. In a blender, combine oil, sugar, vinegar and Worcestershire sauce. Cover and blend for 30 seconds 4. Add remaining ingredients to dressing and stir 5. Pour over salad and toss

Tips:

  • Choose ripe, fresh fruits: The quality of your fruits will greatly impact the flavor of your salad. Look for strawberries that are plump and red, and kiwis that are firm and slightly soft to the touch.
  • Slice the fruits evenly: This will help ensure that they cook evenly and absorb the dressing consistently.
  • Use a light hand with the dressing: You don't want to overpower the delicate flavor of the fruits. A simple vinaigrette or honey-lime dressing is a good option.
  • Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing.
  • Serve the salad within a few hours of making it: The fruits will start to lose their color and texture if they sit for too long.

Conclusion:

This kiwi strawberry salad is a delicious and refreshing way to enjoy fresh fruits. It's perfect for a summer picnic or potluck, or as a light and healthy snack. With its vibrant colors and sweet-tart flavor, this salad is sure to be a hit with everyone who tries it.
