if you are a garlic-lover then you will love these tender soft homemade buns, I suggest for U.S. members to use 2-1/2 cups bread flour or can use half bread and all-purpose flour, for Canadian members you may use 2-1/2 cups all-purpose flour, make certain that your egg is at room temperature you may speed up the process by placing the cold egg in a small bowl of fairly warm water (not hot) for about 15 minutes --- these are at their best when eaten warm out of the oven :)

1/3 cup butter, melted (can use a little more butter)
1 teaspoon garlic powder (more for sprinkling on top of buns if desired)
1/2 cup warm water
1 teaspoon sugar
1 (1/4 ounce) package dry yeast (2-1/4 teaspoons)
2 1/2 cups all-purpose flour (more if needed)
1 tablespoon sugar
1 teaspoon salt
1 teaspoon garlic powder (can use 1-1/4 teaspoons)
1/2 cup warm milk (not hot, and not scalded)
2 tablespoons shortening, room temperature
1 large egg (room temperature)

Steps:

  • Spray two round 8-inch baking pans with cooking spray (preferable a dark metal pan).
  • Melt 1/3 cup butter then mix in 1 teaspoon garlic powder until well combined.
  • Drizzle enough melted butter/garlic mixture to lightly cover the bottom of the pan; set the remaining butter/garlic mixture aside to use later.
  • Attach the kneader blade to the heavy duty stand mixer.
  • In a small bowl or cup proof the yeast with 1 teaspoon sugar in 1/2 cup warm water for about 8-10 minutes or until foamy (if the yeast does not foam discard and start again).
  • In the stainless steel mixing bowl from a heavy duty stand mixer combine 2-1/2 cups flour with 1 tablespoon sugar, salt and 1 to 1-1/4 teaspoons garlic powder, warm milk, soft shortening and egg.
  • After the yeast has been proofed pour into the bowl then start mixing/kneading adding in a little more flour if needed to create a soft smooth dough (kneading time should take about 7-8 minutes).
  • Remove to a greased bowl; cover and allow the dough to rise until doubled in size (about 1 to 1-1/2 hours, rising time will vary depending on the temperature of your kitchen and also dough with added egg will take longer to rise).
  • Punch down the dough then divide into 10 even pieces then shape into balls.
  • Place 5 balls in each pan (4 around the edges and 1 in the middle).
  • Stir the reserved melted butter/garlic mixture once again before using as the garlic powder may have settled on the bottom, the lightly drizzle on top of each bun.
  • Using your hands turn the balls to coat in the butter mixture.
  • For even more garlic flavor pinch a small amount of garlic powder between your fingers then sprinkle over the top of each dough ball.
  • Cover with a light clean tea towel and allow to rise for about 30 minutes or until almost doubled in size.
  • Bake in a preheated 375 degree F oven for about 25 minutes or until golden brown.

These should be illegal they are so darn delicious! --- for 16 rolls I suggest to use only a tube pan and do not use one with a removable middle, you could use a bundt pan but you will need to reduce the amount of yeast rolls to about 12 or they will rise over your bundt pan --- make certain to generously grease your pan, I use my recipe#78579 nothing will stick with this! --- start this the night before there is an overnight rising time -- do not use instant pudding for this :)

16 unbaked frozen yeast dinner roll dough (reduce to 12 for a bundt pan)
1 (3 ounce) package regular butterscotch pudding mix (do not use instant)
1/2 cup packed brown sugar
1 1/2 cups chopped pecans or 1 1/2 cups walnuts
1/2 cup melted butter
1/2-1 teaspoon cinnamon (optional)

Steps:

  • The night before; generously grease a tube pan (you MUST grease the pan VERY GENEROUSLY) if using a 12- cup bundt pan reduce the rolls to 12.
  • If using the cinnamon mix with the melted butter.
  • Sprinkle about 3/4 cup chopped nuts into the bottom of the pan.
  • Place the frozen rolls into the pan around and on top of each other over the nuts.
  • Sprinkle the dry pudding mix over the rolls, then sprinkle brown sugar over the pudding mix.
  • Sprinkle remaining 3/4 cup chopped nuts over the brown sugar.
  • Drizzle the melted butter over all.
  • To prevent the dough from forming a hard crust while rising cover with a lightly damp tea towel over top, or place a piece of plastic wrap very loosely over the top and allow to hang at the sides (do not make the wrap tight as these will rise to double).
  • Allow to rise overnight at room temperature or about 8-10 hours.
  • Set oven to 350 degrees F.
  • Bake for 22-25 minutes (baking times will vary for different ovens, so watch closely).
  • Remove the pan from oven and allow to cool for 5 minutes.
  • Turn the pan over and invert onto a serving plate.
  • Serve by pulling apart chunks with a fork.

I've seen garlic bread like this in restaurants before and loved it, so I had to make my own. This goes great with any kind of Italian dish, especially ones with lots of sauce so you can use the sticks to scoop some up.

1/4 cup olive oil
3 garlic cloves, minced
dried oregano
1 hoagie roll (6-8 inches long)

Steps:

  • Preheat the oven to 350°F.
  • Cut the bun in half, then cut each side in half again, crosswise. Lay cut-side-up and score the bread lengthwise two times, forming 3 attached strips. Be sure not to cut all the way to the bottom, but close enough so the bread can easily be pulled apart. (see pictures for visuals).
  • Put the garlic and olive oil in a small dish and heat in the microwave for about 30 seconds or until fragrant. Use a spoon to evenly distribute the olive oil and garlic over each slice of bread. Sprinkle each piece with dried oregano. Place on a baking sheet and put in the oven for 5-10 minutes, until the bread starts to dry. Once most of the bread is dry, turn on the broiler to lightly brown the top. Remove and serve!
