KATE'S CHANTILLY CREAM - STABILIZED WHIPPED CREAM WITH VANILLA

Kate's Chantilly Cream - Stabilized Whipped Cream With Vanilla image

This is "my" whipped cream, which I need to store exactly this way for future reference. It is based on Kittencal's Recipe#79506, but adding 1/4 teaspoon of vanilla. Per Kittencal, for 2 cups whipping cream, use 2 teaspoons unflavored gelatin in 2 tablesppons cold water. Store covered in refrigerator for several days, if it doesn't disappear first. You can use this to frost a cake (but leftovers would need to be refrigerated). A standard serving of any condiment is 2 tablespoons. To maximize the volume, make sure the whipping bowl, beaters, and cream are well chilled before beginning.

Tips:

  • Use Cold Ingredients: Start with chilled heavy cream, a chilled bowl, and chilled beaters. This helps the cream whip up faster and results in a thicker, more stable whipped cream.
  • Whip Gradually: Begin whipping on low speed and gradually increase the speed to medium-high. This helps to incorporate air slowly and evenly, resulting in a smooth and creamy texture.
  • Don't Overwhip: Keep an eye on the cream as it whips. Once it reaches stiff peaks, stop whipping to prevent it from becoming grainy or buttery.
  • Add Sugar Gradually: If desired, add powdered sugar or granulated sugar gradually while whipping. This helps to dissolve the sugar evenly and prevents it from clumping.
  • Use Fresh Cream: For the best results, use fresh heavy cream with a fat content of at least 36%. Older cream may not whip up as well.
  • Keep it Cold: Store whipped cream in an airtight container in the refrigerator for up to 2 days. Bring it back to room temperature for about 15 minutes before serving.

Conclusion:

With the right ingredients, tools, and technique, you can easily make perfect whipped cream at home. Whether you're topping a dessert, making a frosting, or simply enjoying it on its own, this classic culinary staple is sure to delight your taste buds. Remember to keep your ingredients cold, whip gradually, and avoid overwhipping for the best results.
